“Skinny” No-Bake Cookie Oatmeal: A kid “favorite,” in our house, and I feel great serving it to them too!
From the day we became parents, we wanted to make “better” choices when it came to feeding our kiddos. Although a few years later, we don’t pull the “best mom and dad” award, we do try our best, and make better choices when we can.
One morning, we woke up and my oldest asked me the same old, repetitive question…

So badly, I would love to pull a doughnut out of a box for breakfast every morning, but since he was diagnosed with epilepsy, I know that I need to try my best to feed him healthier options, when I can.
I knew it had been weeks since a trip to the grocery store, so it was time to raid the pantry. To my surprise, my dead-tired mom-brain, got a little creative, and my “Skinny” No-Bake Cookie Oatmeal was born. Since then…my kids have BEGGED for it, every stinking day.

I gotta be honest… I had no idea what I was going to do with the CACAO powder, when I found it in the health food store. But that morning, I finally found a use for the organic raw chocolate, mayan superfood powder! SUCCESS.
If you’re looking to change up the breakfast game in your house, and wanting to keep it on the ‘healthier” side… give this “Skinny” No-Bake Cookie Oatmeal a whirl. It’s not strawberries and greek yogurt… but it’s a step better than doughnuts. Right?

📖 Recipe
“Skinny” No Bake Cookie Oatmeal
Ingredients
- 1/2 cup oats
- 1 cup water
- 1 Tablespoon honey
- 1 teaspoon peanut butter
- 1/2 teaspoon raw cacao powder
Instructions
- Using oats and water, cook oats according to package directions.
- Add remaining ingredients, and stir.
- Serve immediately.
