Ingredients

  • 2 lbs boneless pork chops
  • 20 oz. baby potatoes halved
  • 4 cups green beans trimmed
  • 4 tbsp. olive oil divided
  • salt to taste
  • pepper to taste

Instructions

  • Preheat oven to 425 degrees F and spray a large sheet pan with cooking spray or parchment paper.
  • Place baby potatoes and green beans on the pan and toss with salt, pepper, and 2 tbsp. olive oil. 
  • Lay pork chops on the pan and brush with remaining 2 tbsp. olive oil. 
  • Sprinkle with salt and pepper or seasoning of your choice. 
  • Bake for 25-30 minutes, or until pork chops are fully cooked and potatoes are tender enough to be pierced easily with a fork.
