Asian Salad Ingredients

oz.
cabbage and carrot coleslaw mix

packaged red cabbage
or shred red cabbage

romaine lettuce leaves

cup
fresh cilantro

green onions
chopped

can mandarin oranges
with 1 tablespoon of juice reserved

crunchy rice noodles

edamame
shelled and cooked
slivered almonds for garnish

Asian Salad Dressing

tablespoon
sesame oil
1
tablespoon
olive oil
1
tablespoon
rice vinegar
1
tablespoon
juice from mandarin oranges
2
tablespoon
honey
1
clove garlic
small, minced
1
teaspoon
fresh ginger
minced
Juice from half a lime
Instructions
In a large salad bowl, combine all salad ingredients.
In a small bowl, whisk together dressing ingredients and pour over salad.
Toss thoroughly to combine.
Top with extra crispy rice noodles and almonds, if desired.
Notes
You can chop your own cabbage and carrots if desired.
You can find shelled and cooked edamame in the freezer section.
The edamame provides a punch of protein to make this a filling lunch option.
Serving suggestion: Fried Rice or Spring Rolls (Can grab both in the freezer section!)
