Easy Butterscotch Brownies: These old fashioned butterscotch brownies are chewy, fudgey, and surprisingly quick to make! 15 mins prep, 30 mins cook time and you'll have a delicious twist on a blondie ready for your whole family to enjoy!
Heat oven to 350 degrees. Grease a 9x13 pan (or an 8x8 pan if you want thicket brownies) with nonstick cooking spray or line it with parchment paper.
Blend together butter, brown sugar and white sugar in a large bowl or the bowl of a stand mixer. Whisk in eggs and vanilla.
In a separate bowl, mix together flour, baking soda and salt.
Using a wooden spoon (or the paddle of a stand mixer on low), mix together sugar and flour mixtures until batter forms. Batter will be thick.
Using a rubber spatula, fold in butterscotch chips. Spread batter into the prepared baking pan.
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean.(If you're using an 8x8 pan, bake for an additional 10-15 minutes.)
Transfer your 9x13 to a wire cooling rack and cool for 10-15 minutes. Cut into 24 squares and serve.
