Cornflake Candy Cookies: A no bake cornflake cookies recipe that uses simple ingredients, like creamy peanut butter, light corn syrup, sugar, vanilla extract, and of course cornflakes!
First, get a large cookie sheet (possibly two, if the candy won't all fit on one) and cover in parchment paper. (Wax paper will work too if needed. If using aluminum foil, spray with non-stick spray.)
Pour the sugar, corn syrup, and peanut butter in a large sauce pan. (One that is big enough to hold the 6 cups of cornflakes eventually.)
While constantly stirring, cook the sugar, syrup, and peanut butter over medium high heat until it starts to boil. When the mixture comes to a boil, remove it from the heat and add in the vanilla extract. Stir until combined. Then, pour in the corn flakes, and stir until the cornflakes are all covered in the mixture.
Use a spoon or cookie scoop, and scoop some of the mixture and drop cookies (candy) onto parchment, quickly, or the candy will harden and become hard to scoop.
If you find that the candy isn't sticking together well after scooped on to the parchment paper, allow the candy to cool for about a minute, or until it's cool enough to touch with your clean hands, and gently form the scoops in to tight, balls.
Then, allow them to full cool on the parchment paper for about 20 to 30 minutes. Enjoy!
Notes
You can freeze this cornflake candy if you want to make them in advance, or save leftovers. They freeze wonderfully, for up to 3 months. Simply store in a freezer container.
