Instructions
Cut potatoes into bite-sized pieces. Add potatoes and chicken stock to
Instant Pot
. Set to manual high for 4 minutes and close the steam vent.
Chop hard-boiled eggs, onion, celery, and red pepper into small pieces. Add to cooked potatoes.
In a medium bowl, combine mayonnaise, vinegar, sugar, mustard, sweet relish, milk, salt, and celery seed. Stir until thoroughly combined.
Add mix to potatoes, stir a few times while pouring.
Chill and store in the refrigerator until ready to serve.
