Funfetti Cake Mix Cookies: These brightly coloured funfetti cake mix cookies are so quick and easy to make! A box of funfetti cake mix, oil, eggs, sprinkles, vanilla and 30 minutes are all you need to create these delicious cookies!
Preheat the oven to 350 degrees. Place a piece of parchment paper on a baking sheet and set aside.
In a large bowl, add the funfetti cake mix, canola oil, eggs, 2 tablespoons colored sprinkles, and vanilla. Stir with a rubber spatula until well combined, about 1-2 minutes.
Cover the bowl in plastic wrap and chill in the refrigerator for 20 minutes.
Remove the bowl from the refrigerator and scoop the cookie dough into 1- to 1 ½-inch balls. Place the balls on the prepared baking sheet and lightly press down to “flatten” the tops a little bit.
With the remaining ¼ cup of rainbow sprinkles, add them to the slightly flattened tops of the cookies.
Place the baking tray in the oven and bake for 8-10 minutes. For the perfect cookies, do not overbake.
Remove the baking tray from the oven and let the cookies cool completely on a wire rack before serving. Warning: cake mix cookies usually have a soft texture, so be careful when transferring them to the cooling rack!

STORAGE: Store your confetti cake mix cookies in an airtight container at room temperature for 4-5 days. You can also freeze these chewy funfetti cookies in an airtight, freezer safe container for up to a month!
