Air Fryer Baby Potatoes: This baby potato recipe is quick and easy - all you need are mini potatoes, olive oil, and some spices to create these mouthwatering potatoes! This is the perfect side dish for a busy weeknight but fancy enough for those special occasions, too!
Preheat the air fryer to 400°F while you are preparing the potatoes.
Cut potatoes in half and place in a large bowl. Drizzle potatoes with olive oil then sprinkle with chopped rosemary, garlic powder, salt and pepper. Toss the potatoes to evenly coat with oil and seasonings.
Add potatoes to the air fryer basket in a single layer. Cook for 15 minutes turning once halfway through cooking.
Enjoy these air fry baby potatoes immediately with your favourite dipping sauces or a dollop of sour cream!

NOTES: 1 teaspoon of dried rosemary can be substituted for the fresh rosemary.STORAGE: Store any leftover air fryer baby potatoes in an airtight container in the fridge for 3-4 days. When you are ready to eat them, reheating them in the air fryer for a few minutes will warm them up and make them crispy again!
