There is no dessert more "fall" than pumpkin pie and these deliciously bite-sized pumpkin cheesecake bites will give your traditional pumpkin pie a run for its money!
Combine crust ingredients into a food processor and then press 2 tablespoons into the muffin tin cups. We suggest using cupcake liners.
Combine all of the pumpkin cheesecake filling ingredients and mix until creamy and smooth. Add to your muffin tin.
Place tray in a water bath and bake at 350 for 25-30 minutes. Let chill in the fridge for 2 hours after to fully set.
