Mix all cookie ingredients and drop spoonfuls onto a cookie sheet
Bake on 350 for 8 minutes (times may vary, I suggest starting at 8 minutes and cooking an additional 2 minutes at a time until golden brown)
NOTE* Cookies may seem soft but will set upon cooling. Do not over bake
Preparing Assembly:
Pick your favorite 6 cookies to serve as the base for the owl. The remaining 6 cookies will be used for the eyes.
Find a small circle cookie cutter (we used the cap to a sprinkles container)
Using the remaining cookies, cut out circles for the eyes, set aside
Fill a pastry bag (or a fancy zip-lock bag like we did!) with icing and snip the tip just a tiny bit
To Assemble:
Put a dab of icing on the top of each circle (eye) NOTE* you want to use the bottom of the cookie for the eye as the color difference will make them stand out from the body (cookie)
Lightly press onto the body (cookie)
Put a small dab of icing on the chocolate chips to create the inner eye and beak
For the wings, hold the bag upright straight and squeeze a dab onto the side pulling up quickly. This will create a feathery pattern
Continue this on each side until you are happy with the wings
Make 3 lines at the bottom of each cookie for each talon/foot
