  • 3 lbs red potatoes
  • 1 cup chicken stock
  • 6 hard boiled eggs
  • 1 cup celery sliced
  • 1/2 cup red onion diced
  • 1.5 cup mayonnaise
  • 2 tbsp distilled white vinegar
  • 1/4 cup sugar
  • 3 tbsp yellow mustard
  • 4 tbsp sweet relish
  • 1/3 cup whole milk
  • .5 tsp salt
  • .5 tsp celery seed


  • Cut potatoes into bite-sized pieces. Add potatoes and chicken stock to Instant Pot. Set to manual high for 4 minutes and close the steam vent.
  • Chop hard-boiled eggs, onion, celery, and red pepper into small pieces. Add to cooked potatoes.
  • In a medium bowl, combine mayonnaise, vinegar, sugar, mustard, sweet relish, milk, salt, and celery seed. Stir until thoroughly combined.
  • Add mix to potatoes, stir a few times while pouring.
  • Chill and store in the refrigerator until ready to serve.
