Ingredients

  • 2 Chicken Breasts cooked and shredded
  • 1/2 cup Celery chopped
  • 2 Green onions chopped
  • 1 tbsp Coconut Curry Blend
  • 1/2 cup Mayo
  • 4 Croissants or buns

Instructions

  • Shred cooked chicken breasts into medium bowl
  • Chop celery and green onion into small chunks
  • Add veggies, mayo and curry powder to bowl and mix well
  • Spoon curry chicken salad mixture onto croissant or bun
  • Top with spinach or leaf lettuce
