Mixed Berry Mini Trifles: This trifle is an easy no bake dessert that's pretty, too! Cubes of cake, berries, and whipped cream are all you need to make these delicious mixed berry trifles!
4cupsprepared angel food cake or pound cakecut into small ½-inch cubes
2cupsstrawberrieschopped or sliced - or more for decorating the top
1 ½cups blueberriesor more for decorating the top
⅔cuppowdered sugar
2cupsheavy whipping cream
2teaspoonsvanilla extract
Instructions
Set out 6 (9-ounce) clear plastic cups or 6 (8-ounce) mason jars, or a large trifle serving bowl.
In the bowl of a stand mixer with the whisk attachment or a hand mixer, prepare the whipped cream by combining the heavy whipping cream, powdered sugar and vanilla; beat on high speed until stiff peaks form (about 2-3 minutes).
To arrange the trifles, place 1 layer of cake cubes into the bottom of each cup. Or, if making a large trifle bowl, place half of the cake cubes in the bottom.
Add an even layer of strawberry pieces (just enough to cover the cake).
Spoon some whipped cream on top of the strawberries. Then place another cake layer on top of the whipped cream. If making a large trifle bowl, spread half of the whipped cream on top.
Add a layer of blueberries. Top with a last layer of whipped cream.
Decorate with additional blueberries and strawberries, if desired.
For best taste, cover and refrigerate for at least 2 hours before serving. (Although it would still be delicious if you don't have that kind of time to "chill" the trifles!) Enjoy!
