A creamy, comforting chicken casserole with a buttery Ritz cracker and poppy seed topping. It comes together in about ten minutes with cooked chicken and a few pantry staples, then bakes up golden and bubbly. It's an easy weeknight dinner that's just as at home on the potluck table.
4cupscooked chickenshredded or cubed (Springer Mountain Farm Chicken Strips were used here)
For the Topping
1sleeveRitz crackerslarge sleeve, about 32 crackers, crushed
1tablespoonpoppy seeds
½teaspoongarlic powder
½teaspoononion powder
6tablespoonsunsalted buttermelted
Instructions
Preheat the oven to 350°F. Lightly grease a 9x13 baking dish with non-stick spray.
In a large bowl, whisk together the cream of chicken soup, sour cream, garlic powder, onion powder, and black pepper until smooth. Fold in the chicken until evenly coated.
Spread the chicken mixture evenly into the prepared baking dish.
In a separate bowl, toss the crushed Ritz crackers, poppy seeds, garlic powder, onion powder, and melted butter until combined. The mixture should look like damp sand, with no dry crumbs or pooled butter.
Sprinkle the cracker topping evenly over the chicken mixture.
Bake uncovered for 25-28 minutes, until bubbly around the edges and the topping is golden brown.
Let rest 5 minutes before serving.
Notes
Crush the crackers coarsely for the best crunch. Too fine and the topping turns pasty.
Bake uncovered so the topping crisps instead of steaming.
Taste and adjust the filling's seasoning before baking.
Drain the chicken well to avoid a watery casserole.
Tent with foil at the end if the top browns too quickly.
