Preheat oven to 350 degrees Fahrenheit. Place butter in a 9x13 pan and place the pan in the oven to melt the butter while the oven preheats.
In a medium mixing bowl, whisk together Bisquick Mix, 2 tablespoons of sugar, and salt. Whisk in milk until smooth. Set aside.
Take the pan out of the oven when the butter is melted, about when the oven is preheated.
In a large bowl, stir together peaches, brown sugar, white sugar, vanilla, and cinnamon.
Pour Bisquick mix into the pan with the melted butter without mixing.
Spoon peach mixture over the top of the butter and bisquick mixture, placing evenly in the pan.
Mix 1 tablespoon of sugar and ¼ teaspoon of cinnamon and sprinkle over the peaches.
Carefully place the cobbler in the preheated oven and bake for 50-55 minutes. Cobbler is done when it is golden brown and a toothpick test comes out clean.
Let cobbler cool 15-30 minutes and serve warm with ice cream if desired.
