Wash, and slice potatoes. Cut your potato longways in half, then halve each half again, so you have 4 pieces, or if using large potatoes, an extra cut may be needed.
8 small russet potatoes
In a large bowl, add potato wedges and oil, and then toss to cover all of the potato wedges. Then, sprinkle on the Fiesta Ranch seasoning packet. Toss to coat until they look evenly seasoned. If desired, sprinkle on salt and pepper.
2 Tablespoons olive oil, 1 packet Hidden Valley Fiesta Ranch Seasoning Mix, salt & pepper
On a cookie sheet covered in aluminum foil, line the wedges, (not touching)
Bake at 400 for 35-40 minutes, or until potatoes are cooked through.
