Baked Fiesta Ranch Potato Wedges Recipe
Side dishes have always been a hard thing for me to come up with, for a meal. I have no idea why, but it’s like I use all of my energy coming up with, planning, and executing the main dish… that the side dish is the poor afterthought that usually gets the short end of the stick.
This could possibly be why I tend to lean toward my favorite salad recipe (The Best Side Salad EVER), because it’s healthy, delish, and something that I know my family loves. I’ve also compiled a list of all of our healthy side dish recipes HERE!
Back to our wedges…
When my husband’s birthday rolled around this year, I wanted to do something other than my normal side dishes, something special, and something different. For a “steak and potato,” kind of guy, I knew potatoes needed to fill at least part of that dinner plate. (Plus, potatoes were on sale at the grocery store the other day, and I had an abundant supply on hand.) So this Baked Fiesta Ranch Potato Wedges Recipe was born, and I’m ecstatic to say that it will be hanging around. ESPECIALLY served alongside the “Buffalo Blue Cheese Bacon Dip,” recipe, that’s soon to come for you all.
Baked Wedges Prep:
Slice your potatoes longways, and thick enough for a hearty bite, but thin enough that it won’t take hours to cook through.
This fiesta ranch seasoning has completely taken the lead in the ranking of my food love. (Spice category only.) A local sub shop started putting this in their mayo, and I loved it so much! I told them I’d pay for the recipe if they’d give it to me. Their response?
Jessica, it’s the Hidden Valley Fiesta Ranch packet that you can get at the grocery store. Just put it in mayo.
What!? Life changed.
Coat the potatoes in a package of fiesta ranch seasoning and olive oil. Then, place on a cookie sheet lined with aluminum foil. Sprinkle salt (to taste) over the wedges.
Bake those babies…
Then serve those babies. Served alongside the Buffalo Blue Cheese Bacon Dip, these were top-notch incredible! Bacon+Potatoes+Ranch=Heavenly. Or, this is an amazing aioli recipe that will taste delicious with them!
Recipe
Baked Fiesta Ranch Potato Wedges Recipe
Ingredients
- 8 potatoes
- 2 Tablespoons olive oil
- 1 packet Hidden Valley Fiesta Ranch Seasoning Mix
- salt & pepper to taste
Instructions
- Preheat oven to 400 degrees Fahrenheit
- Wash, and slice potatoes. Cut your potato longways in half, then halve each half again, so you have 4 pieces.
- In a large bowl, mix together wedges, olive oil, and the Fiesta Ranch seasoning packet
- On a cookie sheet covered in aluminum foil, line the wedges, (not touching)
- Bake at 400 for 35-40 minutes, or until potatoes are cooked through.
