    Fiesta Ranch Baked Potato Wedges

    These Fiesta Ranch Baked Potato Wedges have so much flavor, and are nice and crispy on the edges but soft and fluffy in the middle. Serve them as an easy side dish or with a lot of different dipping sauces as a fun party appetizer.

    Ingredients You’ll Need

    All you’ll need for these fiesta ranch baked potato wedges, are:

    • potatoes – I like to use large baking potatoes but you can use smaller russet potatoes too.
    • Fiesta Ranch seasoning packet – Hidden Valley Ranch makes my favorite seasoning for these, and I just use an entire packet if I’m using 8 small russet potatoes, or 4 large potoates.
    • salt and pepper – these are optional and I like to sprinkle a little salt (there’s already salt in the seasoning mix, so be careful not to over-salt them) and a little pepper for an extra kick.
    • oil – I use coconut or olive oil, but you can use your favorite type for cooking.

    How to Make Baked Potato Wedges

    Preheat your oven to 400 degrees F.

    Wash, scrub, and slice your potatoes longways, and thick enough for a hearty bite, but thin enough that it won’t take hours to cook through. When using large potatoes, I slice 3 times. When using smaller russet, I only slice twice.

    When the potatoes have been sliced, place them in a large mixing bowl (or ziptop bag) and drizzle with oil, stir to cover, and then sprinkle on the seasoning. Stir (or shake) to coat the potatoes.

    Then, place the wedges on a cookie sheet lined with aluminum foil, making sure they don’t overlap.

    Bake the potatoes at 400 degrees for 35-40 minutes until the potatoes are fluffy in the center.

    Dip Ideas for Potato Wedges

    If you’re serving these Fiesta Ranch baked potato wedges as an appetizer recipe, it would be so much fun to serve different dipping sauces with these. Here are some of my favorite ideas:

    • ranch dressing (or this jalapeno ranch dip)
    • blue cheese dip
    • cheese dip
    • ketchup
    • honey mustard
    • teriyaki sauce

    Ingredients

    • 8 small russet potatoes or 4 large baking potatoes
    • 2 Tablespoons olive oil
    • 1 packet Hidden Valley Fiesta Ranch Seasoning Mix
    • salt & pepper to taste

    Instructions
     

    • Preheat oven to 400 degrees Fahrenheit
    • Wash, and slice potatoes. Cut your potato longways in half, then halve each half again, so you have 4 pieces, or if using large potatoes, an extra cut may be needed.
      8 small russet potatoes
    • In a large bowl, add potato wedges and oil, and then toss to cover all of the potato wedges. Then, sprinkle on the Fiesta Ranch seasoning packet. Toss to coat until they look evenly seasoned. If desired, sprinkle on salt and pepper.
      2 Tablespoons olive oil, 1 packet Hidden Valley Fiesta Ranch Seasoning Mix, salt & pepper
    • On a cookie sheet covered in aluminum foil, line the wedges, (not touching)
    • Bake at 400 for 35-40 minutes, or until potatoes are cooked through.

      So simple, So easy and So good! The Fiesta ranch seasoning is great for just the right amount of flavor. Served these potatoes with grilled chicken that I had marinated overnight in Catalina salad dressing.
