Ingredients
These delicious little potatoes are made with simple ingredients, as most of the best dishes are! You can find fresh rosemary and baby potatoes at your local grocery store, and the rest of the ingredients you probably have in your cupboard right now.

- 1.5 pounds mini gold potatoes
- 1 tablespoon olive oil
- 1 tablespoon fresh rosemary finely chopped
- 1 teaspoon garlic powder
- ½ teaspoon flakey sea salt
- ½ teaspoon ground black pepper

Instructions
It’s so easy to make these mini potatoes in the air fryer!
- Preheat the air fryer to 400°F while you are preparing the potatoes.
- Cut your baby gold potatoes in half and place in a large bowl. Drizzle potatoes with olive oil then sprinkle with chopped rosemary, garlic powder, salt and pepper. Toss the potatoes to evenly coat with oil and seasonings.


- Place your cut baby potatoes in air fryer basket in a single layer. Cook for 15 minutes turning once halfway through cooking.

- Enjoy these air fry baby potatoes immediately with your favourite dipping sauces or a dollop of sour cream!

Substitutions
Do you need to change something up in this recipe? Here are some of my suggestions…
- Olive Oil – I use olive oil because of its high smoke point and mild flavor, but you can definitely replace it with your favorite oil and the end result will still be delicious.
- Rosemary – Fresh rosemary can be substituted for 1 teaspoon of dried rosemary.
- Mini Potatoes – if you don’t have mini potatoes, you can cut larger potatoes into 6-8 pieces (depending on how large the potato is) and you should be able to keep the cook times the same.
- Potato Type – if you don’t have gold mini potatoes (or baby potatoes, small potatoes, fingerling potatoes…whatever you call them), you could also use mini red potatoes. New potatoes from the garden would also be delicious! All of these potatoes have thin skins and would crisp up nicely (I would NOT recommend using a russet potato for this, its skin is too thick).
Variations
This recipe is very simple, but that’s part of its charm. Like most simple recipes, you can get creative and make this one recipe so many different ways! Try the variations below and make your air fryer mini potatoes your own way.
- Spicy Tex Mex – omit the rosemary and garlic powder and instead add 2 teaspoons of taco seasoning. If you like things spicy, you can add chili flakes or hot sauce to your liking as well!
- Cheesy – after you’ve coated your potatoes with olive oil, add ¼ cup of parmesan cheese to the potatoes along with your spices for a delicious cheesy variation on these air fryer roasted baby potatoes!
- Spice Swap – you can change out the rosemary and garlic in this recipe for your favorite seasonings! Try using Italian seasoning, cajun seasoning, onion powder, fresh parsley, etc.
Can I use whole baby potatoes?
If you want to make air fryer whole baby potatoes, you will simply need to adjust the cooking time. When you cut the mini potatoes in half they cook a bit faster. For a whole baby potato, I would let them cook for 20 minutes (turning them half way through) and then check for doneness. The potatoes are done when you can easily pierce them with a fork.
Storage
Store any leftover air fryer baby potatoes in an airtight container in the fridge for 3-4 days. When you are ready to eat them, reheating them in the air fryer for a few minutes will warm them up and make them crispy again!
Top tip
I find that potatoes cook best at 400°F in the air fryer. If you cook them at a lower temperature they will still cook through (although it will take longer), but they won’t get nice and crispy on the outside.
If your potatoes don’t have a nice crispy skin after cooking in the air fryer, the most likely cause is crowding. If your potatoes are too squished, the air can’t get around all sides of the potato and it won’t be able to cook to that nice crispy brown you are looking for. Make sure that you don’t pack your air fryer basket too full – it’s better to do two batches and have nice crispy potatoes!
Not at all! You can simply pop your raw potatoes (with their oil and spices) right in the air fryer basket and cook them!
