These air fryer breakfast potatoes (or air fryer home fries) are a really easy side dish recipe that pairs well with almost any breakfast recipe and remind me of the fried potatoes and onions that you can get at your favorite greasy spoon restaurant or at a cafe-style breakfast! (But healthier!)
What’s not to love about crispy breakfast potatoes without the restaurant wait!? These breakfast potatoes are one of my favorite air fryer recipes!
My favorite thing to do is serve them with air fryer bacon, canned cinnamon rolls in the air fryer, this biscuits and gravy casserole recipe, or use them in breakfast burritos!

- They’re an easy delicious breakfast side! For this simple recipe, you’re going to need a few simple ingredients, an air fryer, and a small chunk of time. That’s it! This recipe is a breeze and so is the clean-up process and it makes the best breakfast potatoes!

Ingredient Checklist

- 4 cups cubed and peeled Gold Potatoes (about 4-5 medium size potatoes)
- 2 tablespoons olive oil (any vegetable oil will work)
- 2 teaspoons Kosher salt
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon fresh ground pepper
- Black pepper to taste (optional)
Step by Step Directions
- Wash potatoes in cold water and peel the potatoes.
- Drain potatoes and pat dry with a paper towel.
- Cut the potatoes into approximately 1-inch cubes.
- In a large mixing bowl, put your cut potatoes and add oil (Image 1 below).
- Mix potatoes until all are coated.
- Add seasoning and mix until the seasoning is evenly distributed (Image 2 below).
- Pour potatoes into the basket of the air fryer (Image 3 below).
- Cook at 400 degrees f for a cooking time of 20 to 25 minutes (Image 4 below).
- Serve and Enjoy!
Adding Green Peppers and/or Onions to Potatoes
To make this a more complete recipe, you can add green bell pepper and/or chopped onion to your crispy potatoes. Simply cut and season your vegetables then add them to the air fryer after cooking the potatoes for 10 minutes. You can use any color of bell pepper, but green is my favorite!
FAQs
Yes! You can cook breakfast potatoes ahead of time but for best results I would recommend reheating them in the air fryer. Reheating your potatoes in the air fryer will keep them crispier than the microwave or oven would.
I’ve found that gold potatoes make the best roasted potatoes but you can substitute for red potatoes or Yukon potatoes if needed. Sweet potatoes will also work but they will not give you the same “crispy breakfast potato” taste.
If you’re like me, you like your breakfast potatoes extra crispy! The directed cook time is 20-25 minutes and I would recommend cooking for the full 25 minutes to achieve extra crispy potatoes.
Making a Breakfast Hash
A super quick and easy way to turn this into a complete breakfast is to add meat and/or veggies! My boys love it when I add bacon bits, and sausage, and serve it with eggs. I even cook bacon using the air fryer because it’s so easy! (Not going to lie… cooking the potatoes after the bacon in the air fryer, the bacon grease residue on the basket can add a little non-stick, flavor too!) Can I use frozen potatoes in the air fryer?
Yes! In fact, frozen potatoes will actually cook faster than fresh potatoes. Season your frozen potatoes as directed in this recipe and then cook at 400 degrees F for roughly 15 minutes. Check your potatoes with a fork and if they aren’t soft enough, cook for another 3-4 minutes. You can even make hashbrowns in the air fryer with frozen hashbrowns or frozen sweet potato fries in the air fryer!

- At 20 minutes they should be cooked, however, adding a little crisp is ideal so add another 5 minutes for a total cook time of 25 minutes.

These were amazing! It was so nice to have fresh potatoes in the morning. I soaked the cubes in water first to get some of the starch out and then patted them dry. They turned out so crispy.
