Instructions

Cool undisturbed. Carefully pour into a heat-safe mixing bowl. Let cool without stirring or beating until it reaches 110°F, about 1–2 hours.
Prepare the pecans and pan. While the mixture cools, heat the oven to 300°F. Spread the pecans on a baking sheet and toast for 5–8 minutes, until fragrant and lightly toasted. Cool completely and finely chop. Line an 8×8-inch pan with two crossing pieces of parchment, leaving overhang on the sides. Lightly butter the parchment.
Beat the fudge. Once the mixture reaches 110°F, add the vanilla. Beat with a wooden spoon or the paddle attachment of a stand mixer on low to medium-low speed until noticeably thicker, lighter in color, and no longer glossy. This takes about 5–7 minutes with the mixer or 8–10 minutes by hand; watch the texture as well as the time.
Add pecans and spread. Fold in the cooled pecans. Immediately transfer to the prepared pan and smooth the top.
Set and slice. Let stand at room temperature for several hours or overnight, until firm. Lift out with the parchment and cut into 36 small squares.
