Pie crust cookies are made with an unbaked pie crust, either storebought or homemade. Just brush on melted butter and sprinkle a little cinnamon and sugar, and bake!
Preheat oven to 375°F and line a baking sheet with parchment paper.
Unroll refrigerated pie crust on to clean surface. *See notes.
Cut out shapes with cookie cutters and place on prepared baking sheet.
Brush melted butter on to cookies and sprinkle with the cinnamon sugar mixture.
Bake in the preheated oven for 7-8 minutes or until the cookies no longer look "wet."

Notes
* If making your own cinnamon-sugar mixture, combine ¼ cup of white granulated sugar with 1 Tablespoon of ground cinnamon. This will make more than you'll probably need but you can store for later or even double the pie crust cookies recipe.* Sprinkle cinnamon sugar on to surface before cutting the cookies out, so the pie crust doesn't stick to the surface.
