    Pie Crust Cookies

    Pie crust cookies are just about as easy as they can get when using a refrigerated pie crust. Or, if using a homemade pie crust is more your style, that can easily be done with this fun cookie recipe too!

    These are a great way to also use any leftover pie crust scraps, so don’t throw them away! Roll the scraps back out, get your favorite cookie-cutters and brush with butter and a cinnamon-sugar spice blend, and watch them disappear.

    When I was little, my mom would make the most delicious little treats out of her leftover pie crust scraps. As an adult, I’ve found it’s even fun to buy refrigerated pie crusts to do the same thing, for a quick little treat.

    If you’re using a refrigerated pie crust, they usually come 2, to a box. So if making a recipe like this easy egg custard or this lemon pie recipe, that only requires one crust, these pie dough cookies would be a great way to use up the other crust!

    Here’s what you’ll need to make these pie crust sugar cookies recipe:

    • Refrigerated Pie Crust – Or of course, homemade pie crust or scraps.
    • Butter – Salted or unsalted butter will work for this recipe.
    • Cinnamon/Sugar – For even more ease, sometimes you can find a cinnamon-sugar blend at the store. However, you can sprinkle on the cinnamon and sugar separately. (See below for ratios.)

    How to Make Pie Crust Cookies

    Preheat the oven to 375°F (or the temperature recommended on the pie crust box) and clean the surface where you plan to make the cookies.

    Tip: Sprinkle a little sugar (or the cinnamon/sugar blend) on the surface, to keep the pie crust from sticking to the surface.

    STEP 1. Unroll the pie crust.

    STEP 2. Using cookie cutters, cut out as many shapes as you like, and place them on a baking sheet that’s lined with parchment paper.

    STEP 3. Brush melted butter on to cookies and sprinkle with a cinnamon and sugar mixture.

    STEP 4. Bake in the preheated oven for 7-8 minutes, or until the cookies no longer look “wet.”

    Recipe Pro Tips

    • Shapes – The cookies don’t have to be in cookie-cutter shapes. Take a knife and cut strips in to the pie crust (almost in the shape of “french fries“) and bake the same way. Or, you can cut the pie crust in to strips and roll them to make them look like a cinnamon roll.
    • Cinnamon Sugar Mixture – If making your own cinnamon-sugar blend, mix together ¼ cup of white granulated sugar and 1 Tablespoon of ground cinnamon. This will result in more than you’ll need for one pie crust, so you can cut down on this or save the remainder for later.
    • More Variations – Feel free to add your favorite toppings to these cookies, or even add jam, or top with a strawberry buttercream, like we did with these sugar cookie sandwiches.

    • 1 refrigerated pie crust
    • 2 Tablespoons butter melted
    • 3 Tablespoons cinnamon-sugar mixture *See notes

    • Preheat oven to 375°F and line a baking sheet with parchment paper.
    • Unroll refrigerated pie crust on to clean surface. *See notes.
    • Cut out shapes with cookie cutters and place on prepared baking sheet.
    • Brush melted butter on to cookies and sprinkle with the cinnamon sugar mixture.
    • Bake in the preheated oven for 7-8 minutes or until the cookies no longer look "wet."

    Notes

    * If making your own cinnamon-sugar mixture, combine ¼ cup of white granulated sugar with 1 Tablespoon of ground cinnamon. This will make more than you’ll probably need but you can store for later or even double the pie crust cookies recipe.
    * Sprinkle cinnamon sugar on to surface before cutting the cookies out, so the pie crust doesn’t stick to the surface.
