What is Bundt Cake?
A bundt cake is not a specific type of cake, but it’s the pan it’s baked in. A bundt pan is a circular, ring-shaped pan with a whole in the middle. There’s a variety of shapes and sizes that bundt cake pans come in. Because of the shape of the pan, the cake batter touches more sides of the pan. That results in a delicious crusty edge.
Bundt Cake Ingredients Checklist:
- 3 cups sugar
- 1 ¼ cups butter, softened
- 1 (8 oz.) package cream cheese, softened
- fresh lemon juice
- 2 teaspoons vanilla extract
- ⅛ teaspoon salt
- 6 large eggs
- 3 cups flour
Glaze Ingredients:
- 2 cups powdered sugar
- 2 tbsp lemon juice
Step by Step Directions:
- Heat oven to 325 degrees.
- Grease your bundt pan with cooking spray so the bottom of the cake and sides of the cake don’t stick.
- Beat sugar, butter and cream cheese in large mixing bowl until light and fluffy.
- Next mix in the lemon juice, vanilla and salt.
- Add eggs one at a time, beating after each addition.
- Next add in your flour and mix until just combined (Image 1).
- Pour batter into prepared pan (Image 2).
- Bake 1 hour 15 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean.
- Let cool for 10 minutes before removing from pan and letting cool completely.
- In a small bowl whisk together the glaze ingredients until smooth.
- Drizzle all over cake and top the cake with lemon zest if desired.
Why is a Bundt Cake so Moist?
As you know, a bundt cake pan has a unique shape that allows more surface area of the cake to be exposed to high temperatures. Because of this, bundt cakes are made to be a really moist cake.
The best part? In this recipe, we’ll use cream cheese and butter to get a super lemon bundt cake.
Expert Tips and FAQs
Yes! You should soften your cream cheese. Whether you’re using a hand mixer, electric mixer, or mixing by hand, it will be easier to combine the cream cheese when it’s softened.
You should let your cake cool on a cooling rack for at least 10 minutes before adding icing to the top of the cake. The icing will set up much better on a cooled cake.
To see if your lemon bundt cake is done, you should poke holes in the cake with a toothpick before removing it from the oven. If the toothpick comes off clean, then your super lemon pound cake is done.
Do you Have to Refrigerate Lemon Bundt Cake?
Because this lemon pound cake has lemon frosting and cream cheese, you’re going to want to store it in the refrigerator when you’re not serving. (You can store it in an airtight container like a bundt cake keeper, or even lightly cover it with plastic wrap, careful not to ruin the glaze!) This will ensure your cake stays fresh for a longer period of time.
This bundt cake will taste best eaten at room temperature so make sure you let it sit out before serving.
Do I Need to Grease my Bundt Pan?
Yes! It’s crucial that you grease every knick and cranny of your bundt pan so that your cakes comes out clean. A prepared bundt pan will be thoroughly greased so that no batter will stick to the sides of the bowl. For easier cooking, you can use a silicone bundt pan! (That still needs to be greased but it’s not as tedious!)
I have a feeling this cake will become a new favorite and you’ll want to make it for an easy dessert at home or to impress your guests at birthday parties, the holidays, or any special occasion!
