This slow cooker pulled beef recipe uses simple ingredients that create delicious flavor, while slow cooking for 8 hours! Serve alone or on bread as a sandwich, or on top of mashed potatoes.
In a small bowl, mix together the 1 ½ Tablespoons salt, 1 Tablespoon pepper, 1 Tablespoon smoked paprika, 2 teaspoons dried rosemary, 2 teaspoons dried thyme, and garlic powder if using that instead of minced garlic.
Cut 1 white onion in to small slices and place them in the bottom of the slow cooker. Rub seasoning mixture all over roast.
Place 5 pound chuck roast on top of sliced onions and top, spread 2 Tablespoons minced garlic on top of roast.
Pour 1 cup beef broth on top of roast and onions, place lid on slow cooker and cook on low for 8 hours.
Remove roast from slow cooker and shred beef with two forks while still warm.If desired, pour some of the juices and cooked onions on top of the shredded beef and then serve on bread as a sandwich, or on top of mashed potatoes if desired.
