This Slow Cooker Pulled Beef recipe uses simple ingredients to give this tender chuck roast amazing flavor, all while cooking in the Crock Pot. Serve on bread as a sandwich, on top of mashed potatoes, rice, or even as a stand-alone.

This tender pulled beef is slow cooked to perfection, on low for 8 hours, and acts as an amazing base for so many dishes like pasta, or to serve on sliders. Or, this pulled chuck roast is even delicious next to some of your favorite side dishes.

Ingredients for Crock Pot Pulled Beef
The ingredients used in this recipe are simple, and they give the pulled beef a flavor that pairs perfectly with so many things!
I’ve provided a few key notes on some of the ingredients below, but you can skip right to the recipe card below with all the ingredients and instructions listed in one place.

- Chuck Roast – I used a 5-pound roast for this recipe, so if your roast is smaller/larger, please note that the cook times and ingredient amounts can be adjusted if preferred. However, this recipe is very forgiving so feel free to keep things the same and watch as it cooks.
- Garlic – I have also used garlic powder instead of minced garlic and either will work great but I prefer minced garlic for more garlic flavor. Also, 2 Tablespoons of garlic gives this recipe quite a bit of garlic flavor so feel free to cut back on that if you don’t like it to overpower.
- Smoked Paprika – You can use regular paprika instead of smoked paprika if desired. The flavor won’t vary too much at all.
How to Make Slow Cooker Pulled Beef
It’s really easy to make pulled beef in the slow cooker! It consists of seasoning the meat, placing it in the Crock Pot, and allowing it to cook!

- Mix spices together (except garlic if using minced garlic, although garlic powder can be mixed in with the other spices if using that instead).
- Slice onions and place in the bottom of the slow cooker.
- Coat roast with spice mixture and place in slow cooker, and top with minced garlic (unless garlic powder was used instead).
- Pour broth over roast and onions, and place the lid of the slow cooker on top. Cook on low for 8 hours.

- Remove roast from the slow cooker, and place on a platter that’s large enough for the chuck roast to be shredded.

The roast is now ready to be enjoyed how you wish! If serving alone, pouring some of the juices on top of the shredded beef, as well as the onions, is my favorite way to keep the meat from drying out and adding more flavor.
Pro Tips:
- Tough Roast: If you find that your roast is tough when shredding, it may need to cook longer. It could just be a tough cut of meat that needs a little more time.
- Gravy: In my Instant Pot tri-tip recipe, I made a gravy out of the drippings and this can be done with the drippings of this chuck roast too.
- Garnish: If entertaining, sprinkling fresh parsley on top adds some great color to this dish!

Storage
To store leftover cooked pulled beef, allow it to cool and store it, preferably with some of the juice and onions to keep it from drying out, in an airtight container and enjoy within 4-5 days.

Slow Cooker Pulled Beef

- 5 pound chuck roast
- 1 ½ Tablespoons salt
- 1 Tablespoon pepper
- 2 Tablespoons minced garlic or garlic powder
- 1 Tablespoon smoked paprika
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 1 cup beef broth
- 1 white onion
Instructions
- In a small bowl, mix together the 1 ½ Tablespoons salt, 1 Tablespoon pepper, 1 Tablespoon smoked paprika, 2 teaspoons dried rosemary, 2 teaspoons dried thyme, and garlic powder if using that instead of minced garlic.
- Cut 1 white onion in to small slices and place them in the bottom of the slow cooker. Rub seasoning mixture all over roast.
- Place 5 pound chuck roast on top of sliced onions and top, spread 2 Tablespoons minced garlic on top of roast.
- Pour 1 cup beef broth on top of roast and onions, place lid on slow cooker and cook on low for 8 hours.
- Remove roast from slow cooker and shred beef with two forks while still warm.If desired, pour some of the juices and cooked onions on top of the shredded beef and then serve on bread as a sandwich, or on top of mashed potatoes if desired.
