23frozen taquitos or similar amount of chicken or preferred flavor of taquitos
2cupsred enchilada sauce
15ouncescan corndrained
15ouncesblack beansrinsed and drained
2cupsshredded cheddar cheese
Instructions
Preheat oven to temperature that's suggested on the box of the frozen taquitos.
Grease a 9x13 baking dish.
Pour frozen taquitos in to baking dish, and spread them out so they aren't overlapping.
Pour drained corn and drained and rinsed black beans on top of taquitos.
Next, pour enchilada sauce on top of all of the ingredients in the baking dish, trying to pour it evenly.
Sprinkle 2 cups of shredded cheese across the top of the other ingredients.
Place baking dish in oven and bake for the time that is instructed on the box of taquitos, and add 5 minutes to the cook time. NOTE: For my casserole and frozen taquitos, I bake a 23 count box of frozen chicken taquitos, and bake the casserole at 400° for 20-25 minutes or until it's heated through.
Notes
Variations: Feel free to switch out chimichangas, or burritos for the taquitos if needed. However, do note that you'll want to follow the directions on the box for whichever you choose so it bakes long enough. Salsa instead of enchilada sauce: Instead of enchilada sauce, you can use salsa.
