This Taquito Casserole comes together in about 30 minutes, using frozen taquitos, and a few other ingredients that you probably already have on hand, or that you can easily grab at almost any grocery store!

Great to Know: You can see that cheese is the only perishable ingredient, and cheese tends to be an ingredient that is commonly on hand, so this means that this is a dinner recipe that can be used for those last-minute dinner ideas!
- Frozen taquitos – I bought the chicken taquitos but feel free to use your favorite kind! You’ll also bake these right from frozen, so no need to thaw beforehand. Substitution Ideas: You can more than likely use frozen chimichangas or frozen burritos if you desire, although the baking time may change if they’re thicker than taquitos, so make sure to check the instructions on the box.
- Canned goods – make sure to drain your corn and drain and rinse your black beans, before adding them to the dish.
- Cheese – shredding your own cheese is recommended, although not required. The pre-shredded cheese from the store is easy and saves time for sure, although it’s not as creamy as when you shred your own.
How to Make Taquito Casserole
Ready for one of the easiest casserole recipes there is? See below how to put this together in just a couple of minutes.
- Grease a 9×13 baking dish, and arrange all of the taquitos in to the bottom of the dish. (Save the box for instructions later.)
- Next, pour the drained corn and drained and rinsed beans on top of the taquitos.
- Pour both cans of enchilada sauce over the top of the beans and corn.
- Finally, sprinkle shredded cheese on top of everything.
- Lastly, place the casserole in to the oven and bake the casserole according to the directions stated on the box of the taquitos, and add 5 minutes to the suggested bake time. (This is so it allows enough time to melt the cheese and cook the additional ingredients that have been added.)
TIP: When I make this, I make 23 chicken taquitos – and I bake this casserole at 400° for 20-25 minutes or until heated through.
Serve this delicious casserole once removed from the oven, and enjoy warm!

Taquito Casserole
Ingredients
- 23 frozen taquitos or similar amount of chicken or preferred flavor of taquitos
- 2 cups red enchilada sauce
- 15 ounces can corn drained
- 15 ounces black beans rinsed and drained
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to temperature that's suggested on the box of the frozen taquitos.
- Grease a 9×13 baking dish.
- Pour frozen taquitos in to baking dish, and spread them out so they aren't overlapping.
- Pour drained corn and drained and rinsed black beans on top of taquitos.
- Next, pour enchilada sauce on top of all of the ingredients in the baking dish, trying to pour it evenly.
- Sprinkle 2 cups of shredded cheese across the top of the other ingredients.
- Place baking dish in oven and bake for the time that is instructed on the box of taquitos, and add 5 minutes to the cook time. NOTE: For my casserole and frozen taquitos, I bake a 23 count box of frozen chicken taquitos, and bake the casserole at 400° for 20-25 minutes or until it's heated through.
