Rotel Salsa is the perfect recipe to keep on hand for those last-minute snack cravings or appetizer recipes when someone comes over!
It also goes great as a quick side dish for an easy lunch recipe like sandwiches, tacos, and burgers.
Did you know it was this easy to make a quick salsa? Sure, you can make a homemade salsa from scratch but the idea of this recipe is for something quick, delicious, and something you can keep on hand for those last-minute needs.

Why is it Called “Rotel” Salsa?
It’s called “Rotel” salsa because it uses canned Rotel to give it the easy of using tomatoes and diced green chilies and other ingredients that we can keep in the pantry. We always keep Rotel on hand to make dishes like this Rotel pasta, of course this Rotel dip, and this Taco Chicken Casserole.
Ingredients You’ll Need
The only thing you may need to buy for this, is the fresh cilantro, since it’s hard to keep that on hand all of the time. (But I have a suggestion for that below.)
I’ll touch on a few of the key ingredients but make sure to check the recipe card below for exact measurements and instructions.
- Taco seasoning: It’s nice to keep packages of this on hand for taco night or for quick snacks like this one. (We also use it in this hot taco dip and taco layer dip.) But you can also make your own taco seasoning!
- Fresh cilantro: Gosh, there’s nothing like using fresh for this recipe. But I know that it may not be something you can always keep on hand. So in a pinch, you can use dried cilantro, even though it’s not the same. Maybe consider buying the fresh, refrigerated cilantro paste to keep on hand so it stays fresh, longer.
- Rotel: To add some heat, you can buy the “hot” diced tomatoes with green chilies if you prefer.
How to Make Rotel Salsa
It’s not difficult to make this recipe at all! It does require a blender, but a food processor could work as well. I’ll walk you through the process but make sure to check out the recipe card below for ingredient amounts and full instructions too.
Simply combine all of the ingredients (except salt) in to the blender and blend for as least 30 seconds, or until the salsa has reached the consistency of your favorite salsa texture.
Grab a chip, and dip and taste-test the salsa.
- Is it the texture you like? Does it need blended more?
- Does it have enough salt? Sometimes taco seasonings can be more salty than others. That’s why it’s best to wait to add any salt.
- This is also a great time to add any additional flavors you may feel like this salsa is missing. (i.e. diced jalapenos for heat, more lime juice?)
How to Store Salsa
Once the salsa is just how you like it, it’s ready to serve! Eat right away or store in the refrigerator for later! Store it in an airtight container and enjoy within 3-5 days.
What to Serve with Salsa?
Of course tortilla chips are a must… but have you tried flavored tortilla chips? Lime flavored is my favorite. But there are also fun flavors out there like “garden salsa” that are a close second.
Salsa also goes amazing on top of beef and cheese burritos, fried tacos, and steak quesadillas.

Rotel Salsa

Ingredients
- 10 ounce can rotel diced tomatoes and green chilies
- 14.5 ounce can diced tomatoes
- 1 packet taco seasoning
- 1 pinch fresh cilantro about 1 tablespoon or more/less depending on your preference
- 1 teaspoon lime juice
- salt optional (Remember that taco seasoning has salt too.)
Instructions
- Place all ingredients, except salt, in to blender and cover with lid. Blend for 30 seconds, or until the consistency of the salsa resembles the texture you prefer.
- If desired, add in salt if needed. (Taco seasonings can differ in salt, so it's better to add, than put in too much.)
- Taste test the salsa to see if it needs more salt .
