Mix all ingredients except queso in skillet, bring to boil on the stove, and then reduce the heat to a simmer, cover and cook for 25 min or until rice is tender and broth has been absorbed.
Fluff rice with a fork. Heat queso up in microwave or on the stove, and pour over rice.
Notes
You can use the entire can of Rotel if you prefer more spice and more tomatoes in the mixture.
If you only have plain rice (without the included seasoning packet in the type of rice suggested) that's ok to use, and it just may result in a milder flavor. Adding more seasoning at the end of the cooking process is an option if you find it needs more flavor.
