This cheesy rice recipe, made using taco seasoning, a can of Rotel, and a few other ingredients topped with queso cheese, makes it an easy recipe that can be a side dish or easy dinner recipe when served with a protein like chicken.
Your favorite store-bought queso makes this recipe a breeze, where the ingredients can be kept on hand for a quick 30-minute dinner too.

Now, this cheesy Mexican rice goes perfectly with those dishes and even enjoyed by themselves.

Ingredients Needed:
Just a few ingredients are needed, and they’re simple! Make sure to check the recipe card below for the full lists of ingredients and instructions. I’ve provided a few notes about the key ingredients below.

- Rice – I prefer the Spanish recipe saffron yellow rice,that comes with the seasoning. This adds so much more flavor to the rice. However, making regular rice, is possible, it’s best to check the package directions for how long to cook the rice, in case it’s a different type.
- Taco Seasoning – A packet of taco seasoning is normally what I use but you can also use my homemade chicken taco seasoning recipe.
- Queso – Using your favorite queso recipe is highly recommended. I prefer the white, blanco queso but you can use yellow if you prefer. You may even choose to use my Rotel Dip recipe or Cowboy Queso for an elevated Mexican cheesy rice.
- Diced Tomatoes & Green Chilies – I use “mild” but you can use “hot” if you prefer a spicier taco cheesy rice. I use half of a 10 ounce can. You can also choose to use 5 ounces of diced tomatoes if you don’t like the heat.
- Chicken Broth – Usually this can be kept in the pantry when it’s in the can or in a box that hasn’t been opened. I didn’t have any of that on hand when I decided to make this, so I made my own chicken broth out of Better Than Bouillon.
How to Make Cheesy Rice with Queso
This is a recipe made on the stove-top, so it’s best to find a skillet that’s big enough to hold all of the ingredients required.



Recipe Tips
- Spice – This recipe, the way it’s made (mild Rotel, etc.) can pack a punch with spice. It’s not the spiciest thing I’ve ever eaten but it’s also not spice-free. I recommend if making this for the first time, try a bite after cooking, and if needed more spice can be added such as red pepper flakes, etc.
- Feel Free to Add – Add roasted broccoli, cooked chicken breasts, grilled shrimp, or strips of steak to round out dinner. This chicken bites recipe is so easy to make and goes great with cheesy rice.
Storage Instructions
Allow the cheesy rice to fully cool before storing in an airtight container and placing it in to the refrigerator. This can be stored but is best enjoyed within 4-5 days.
Recipe Tips
You can. If you have the option to use a yellow rice that’s seasoned, it can add so much flavor. Where using a plain, white rice can have a more bland flavor.
A protein such as these baked chicken cutlets goes well with a starchy side like this cheesy rice recipe. Or this roasted pork tenderloin pairs wonderfully with rice.
This recipe uses chicken broth to cook the rice in, giving it more flavor. Or spices such as taco seasoning, or garlic and cumin can season rice even more.

Cheesy Rice
Ingredients
- 5 ounces diced tomatoes and green chilies Half a can of Rotel, undrained.
- 10 ounces yellow rice Spanish saffron rice recommended (with seasonings)
- 2½ cups chicken broth
- 1 Tablespoon olive oil optional
- 1 ounce packet of taco seasoning or this taco seasoning recipe
- 15 ounces queso
Instructions
- Mix all ingredients except queso in skillet, bring to boil on the stove, and then reduce the heat to a simmer, cover and cook for 25 min or until rice is tender and broth has been absorbed.
- Fluff rice with a fork. Heat queso up in microwave or on the stove, and pour over rice.
Notes
- You can use the entire can of Rotel if you prefer more spice and more tomatoes in the mixture.
- If you only have plain rice (without the included seasoning packet in the type of rice suggested) that’s ok to use, and it just may result in a milder flavor. Adding more seasoning at the end of the cooking process is an option if you find it needs more flavor.
