Garlic Roasted Broccoli is such a delicious way to enjoy the popular green vegetable. The garlic powder, olive oil, and kosher salt are all it takes to make this broccoli side dish in the oven, something the family will love.

How to Make Garlic Roasted Broccoli

To start, just a small little bowl will do, and mix the oil and the seasonings together in it.

    Olive oil with spices

For the broccoli, you can buy the already-cut, broccoli florets, or you can buy the stalks and cut it yourself.

Just cut the broccoli stems off the big stalk, to create smaller broccoli pieces, easy for picking up with a fork and taking a bite. Place them in a plastic bag. (You can also put them in a bowl, and mix this way if you prefer.)

Pour the seasoned oil over the broccoli, seal the bag, and shake to try and coat all of the broccoli.

To avoid dirty dishes, cover cookie sheet (or baking pan) with aluminum foil and spray it with a non-stick spray.

Lay all of the broccoli out on to the foil, trying to make sure pieces don’t overlap. (This is so it will cook evenly.)

    Uncooked Broccoli

    How Long to Bake Broccoli

Bake it at 425 degrees F, for 20 minutes (or longer if you like an even crispier broccoli — I sure do).

    Roasted broccoli in oven

Enjoy this broccoli hot, right out of the oven. If you prefer, you can also sprinkle parmesan cheese over the broccoli or even a little black pepper, or include it in the seasoned oil before coating the broccoli.

This was so easy, and GOOD! I don't even like broccoli that much! Healthy Side Dish Recipe

    Storage

If you have leftovers, allow the baked broccoli to fully cool and then store in a container, in the refrigerator and enjoy within 4-5 days.

Reheat: When reheating, you can warm the broccoli in the microwave or if you have an air fryer or even a toaster oven, this can help the broccoli remain a bit crispy, instead of soggy. You could also put it back in the oven but reheating at a lower temperature would be best so it doesn’t cook more and burn.

    Ingredients

    • 12 ounces broccoli florets About 1.5-2 cups
    • 2 Tablespoons olive oil
    • 3 teaspoons garlic powder
    • salt to taste; I used 2 teaspoons kosher salt
    • black pepper optional
    • parmesan cheese optional

    Instructions

    • Preheat oven to 425 degrees F
    • Place your broccoli in a gallon size ziptop bag
    • In a small bowl, combine oil, powder, and salt (pepper if using)
    • Pour liquid mixture over the top of the broccoli
    • Shake until broccoli is fully covered
    • Pour broccoli out on to a greased cookie sheet, covered in aluminum foil
    • Bake for 20 minutes
    • Remove from oven. Sprinkle with additional salt, parmesan cheese if desired.
    • Serve immediately.

    Notes

It’s best to use fresh broccoli, and not frozen for this recipe. Frozen broccoli has a lot of moisture and can alter the bake time for this roasted broccoli.
It’s best to enjoy this right after cooked, however leftovers can also be enjoyed at a later date.

Hi Tammy! You know what, I had to take a double look at that too! Broccoli actually has carbs! I didn’t realize that until now!
