    This cranberry pretzel salad has a salty pretzel crust, a fluffy cream cheese middle, and a ruby-red cranberry topping. Two cans of whole berry cranberry sauce give that top layer plenty of fruit, with just enough tartness to balance the sweet filling.

    This is the kind of dessert to put together the day before Thanksgiving or Christmas. The crust spends just 10 minutes in the oven, but the cooling and chilling time matters. Plan on about 30 minutes of hands-on work, a few pauses between layers, and an overnight stay in the refrigerator.

    • 2 ½ cups crushed pretzels - measured after crushing; coarse crumbs
    • ½ cup butter - melted
    • ¼ cup granulated sugar

    Cream cheese layer

    • 8 ounces cream cheese - fully softened
    • 1 cup powdered sugar
    • 8 ounces Cool Whip - thawed

    Cranberry layer

    • 2 3-ounce boxes cranberry Jell-O - regular, not sugar-free; 6 ounces total
    • 1 ½ cups boiling water
    • 2 14-ounce cans whole berry cranberry sauce - 28 ounces total

    Pretzels: Crush them first, then measure 2½ cups. Leave small pieces for texture rather than grinding them to dust.

    Cream cheese and Cool Whip: Let the cream cheese soften fully and thaw the whipped topping before mixing. Beat out the cream cheese lumps before folding in the Cool Whip.

    Cranberry sauce and Jell-O: You’ll need two cans of whole berry sauce and two small boxes of gelatin. Use the 1½ cups of boiling water listed here, without adding the extra cold water called for on the Jell-O box.

    Instructions

    • Make the crust. Heat the oven to 350°F. Stir together the crushed pretzels, melted butter, and granulated sugar until combined.

    • Mix the filling. Beat the softened cream cheese and powdered sugar until completely smooth, then fold in the thawed Cool Whip.

    • Spread the filling over the cooled crust, sealing it against the pan on all four sides and into the corners. Refrigerate for 1 hour.

    • Make the cranberry layer. In a heatproof bowl, stir both boxes of Jell-O into 1½ cups boiling water for a full 2 minutes, until dissolved. Stir in both cans of whole berry cranberry sauce, breaking up the sauce so the berries spread evenly.

    • Refrigerate the cranberry mixture for about 90 minutes, until cool and syrupy, roughly the consistency of raw egg white. It should still be spoonable, not fully set. Check the texture as it chills; a warm, watery mixture can melt the filling or seep through gaps.
    • Add the topping. Gently spoon the thickened cranberry mixture over the chilled cream cheese layer. Spread it carefully to cover the filling without dragging through the white layer underneath.
