    Why This Recipe Works

    • The frosting! It’s topped with that undeniably delicious cream cheese frosting (that is homemade)! Forget about store bought, and make your own at home. So good and simple!
    • Ingredients: If you love carrot cake but don’t like making it, this is where these carrot cake rice Krispies shine! They have all the flavors of carrot cake without all the extra work.
    • Ready in just a few minutes: These rice Krispies treats are ready in 20-30 minutes of time! Perfect for a weekend snack or great for a delicious dessert to have after Easter dinner.

    Ingredients Needed

    I’ve highlighted a couple of ingredients with some relevant notes. Aside from this, the ingredients needed are pretty basic.

    • Mini marshmallows – you can also use large marshmallows and cut them down to smaller sizes.
    • White chocolate chips – using semi-sweet chocolate chips or dark chocolate chips is also an option to mix with this cereal mixture.

    Substitutions

    Sometimes substitutions are necessary because of ingredients that are unavailable or needed for dietary restrictions. Here are some suggestions that can help:

    • Add sprinkles: If you want to top these treats with sprinkles that are carrot shapes, little bits and changes like that are always welcomed.
    • Cream cheese mixture: If you’re not a fan of using cream cheese icing with the carrot cake mix, you don’t have to. You can easily top these cereal treats with any flavor of icing or even just a little bit of powdered sugar.
    • Add color: Adding a little bit of green food coloring to the frosting can make these treats really festive for the Easter holiday.

    How to Make Carrot Cake Rice Krispie Treats

    You’ll start by adding parchment paper to a 13X9 baking pan. You can also butter it to make it nonstick.

    STEP 1: Melt the marshmallows. Add the mini marshmallows and the butter to a large pot. Turn the pot on low/medium heat and stir until everything is smooth and melted (Image 1).

    STEP 2: Coat the cereal. Take the pot off the heat and add the carrots, cereal, nutmeg, and cinnamon. Stir until the cereal is coated well (Image 2).

    Tip: As you are stirring the rice krispies, they will become thick and harder to stir. Just do your best to coat them completely.

    STEP 3: Pour. Pour the mixture into the prepared pan and gently press it down so that it’s even. Let it cool.

    STEP 4: Combine. Put the cream cheese and the butter into a bowl and mix with a mixer. Add the vanilla and the powdered sugar. Mix well.

    STEP 5: Melt and stir. Put the chocolate chips into a microwave-safe bowl and heat in 30-second increments. Be sure to stop and stir between each time.

    STEP 6: Stir. Combine the cream cheese mixture with the melted chocolate on low with a mixer.

    STEP 7: Add to the top of the treats. Put the topping into a piping bag and then drizzle it over the top of the treats. Let cool, then cut into pieces and serve.

    Recipe Pro Tip

    • Thin out the chocolate. If you want to think out the melted chocolate chips, you can add a tiny bit of coconut oil to the mixture.

    How do I store leftover rice krispies treats?

    To keep your new favorite recipe as fresh as possible for as long as possible, store them in an airtight container and keep them out of hot and cool areas of your kitchen.

    As long as the treats are sealed well, they should stay fresh for up to 4-5 days without issues.

    How do I keep the mixture from sticking to the edges of the pan?

    A few things can be done to keep this mixture from sticking to the pan. First, laying parchment paper down in the bottom of the pan and having it hang over the edges of the pan is a great way to prevent any type of sticking from happening.

    You can also use nonstick cooking spray so that way you don’t have to stress.

    Can I freeze rice krispie treats?

    Yes, you can. If you want to add these to the freezer, first be sure to wrap them in plastic wrap and then store them in a freezer-safe container. That way, they’re going to be protected from the harsh cold of the freezer and retain their amazing taste.

    To unthaw them, just move them to your fridge for a few hours or overnight. They should return to their traditional and typical texture once they are thawed.

    What other toppings can be added to these carrot cake treats?

    It’s really up to you and what you want, but you have options! You can add sprinkles, shredded coconut, crushed nuts, or even a few mini chocolate chips right on top. Whatever you want to add is totally up to you.

    Equipment

    •  Measuring cups and spoons of various sizes

    Ingredients

    • 4 tablespoons salted butter
    • 10 ounces mini marshmallows
    • 1½ teaspoons cinnamon
    • ½ teaspoons nutmeg
    • 6 cups Rice Krispies cereal
    • ¼ cup carrots grated

    Topping:

    • 2 ounces cream cheese softened
    • 1 tablespoon butter
    • 1 cup powdered sugar
    • ¼ teaspoon vanilla
    • ⅓ cup white chocolate chips

    Instructions
     

    • Prepare a 13×9 baking pan by lining it with parchment paper, or buttering. 
    • Place butter and marshmallows in a large pot and heat on low/medium heat, stirring frequently until melted and smooth. 
    • Remove from the heat and add in cinnamon, nutmeg, carrots and cereal. Stir until well incorporated and the cereal is evenly coated. 
    • Pour the mixture into your prepared pan and gently press it down evenly. 
    • Allow to cool then cut into even squares.

    To make the topping:

    • Place butter and cream cheese in a mixing bowl and mix with an electric mixer until well incorporated. Add in vanilla and powdered sugar and continue to mix until well incorporated. 
    • Place white chocolate chips in a microwave safe bowl and microwave in 30 second increments stirring in between until melted and smooth. 
    • Add the melted chocolate to the cream cheese mixture and mix on low until well mixed. 
    • Place the topping in a piping bag drizzle across the cut cereal treats individually or across the whole pan. Allow to cool before serving. 

    Notes

    Tips:
    • Hard to stir. As you are stirring the rice krispies, they will become thick and harder to stir. Just do your best to coat them completely.
    • Thin out the chocolate. If you want to think out the melted chocolate chips, you can add a tiny bit of coconut oil to the mixture.
    Leftovers: Store any leftover treats in an airtight container for 4-5 days.
