Why You’ll Love This Easy Cookie Recipe

Quick: You can whip these cookies up in just 30 minutes!

Easy: Because these are made with a cake mix, they are the absolute easiest thing to make…seriously! One bowl, five ingredients, stir it all together and roll it into balls. It doesn’t get much easier than that.

Delicious: These cookies aren’t only quick & easy, but they are also super tasty! They are soft and chewy and everything you want from a cookie. If you have a bit of a sweet tooth, this easy recipe is for you!

    Perfect for Little Bakers

This funfetti cookie recipe is the perfect one to make with your little bakers because it’s super simple to make! They’ll love stirring together the batter, rolling out the dough, and adding all those rainbow sprinkles! Making these alongside other fun cookies like these rocky road cookies that also use a cake mix, would be so fun for them too!

    Ingredients for Funfetti cake cookies

You only need 5 simple ingredients for these cookies, and you probably have most (if not all) of them in your house right now! If you don’t, you can find all of these at your local grocery store.

    1. Remove the bowl from the refrigerator and scoop the cake batter cookie dough into 1- to 1 ½-inch balls. Place the dough balls on the prepared baking sheet and lightly press down to “flatten” the tops a little bit.

I’m a firm believer that you should always have a box of cake mix on hand. Not only can you use it as the box directs, you can also use it for recipes like the cake mix cookies we mentioned above and for other quick, easy, and delicious dessert recipes! Our pineapple sunshine cake, caramel apple dump cake, and lemon cake mix brownies are easy recipes also made using dry cake mix!

    Substitutions & Variations

Want to mix things up or need something switched out? Here are some of our favorite suggestions for switching up these colorful cookies.

    • Canola Oil – instead of canola oil, you can use vegetable oil, your favorite oil, or even melted butter.
    • Eggs – instead of eggs, you could use a “cornstarch egg” as a binding agent. Check out this tutorial for more info.
    • Cake Mix – they won’t be funfetti cake mix cookies anymore, but you could absolutely replace the funfetti cake mix with your favourite flavor and create a whole new cookie.
    • Holidays – if you are making these cookies for a specific occasion or holiday, you can add sprinkles that match the theme! Green sprinkles on top for St. Patrick’s Day, red and green for Christmas, red and white for Valentine’s Day…

    Storage

Store your confetti cake mix cookies in an airtight container at room temperature for 4-5 days.

You can also freeze these chewy funfetti cookies in an airtight, freezer safe container for up to a month!

    Expert Tips and FAQs

Is Funfetti cake mix the same as white cake mix?

Funfetti is a white cake mix with sprinkles added in! You can use a funfetti cake mix or a white cake mix and add extra sprinkles to make these easy funfetti cookies!

Is confetti and Funfetti the same thing?

Funfetti is technically a trademark of Pillsbury, so yes a funfetti cake mix and confetti cake mix are just the same thing by different names. We used the terms funfetti cookies and confetti cookies interchangeably in this recipe because they are essentially the same thing. Some other brands have their own name for white cake with sprinkles (like Betty Crocker rainbow bit cake mix), but any cake mix with colourful sprinkles will do.

Can I add more sprinkles to Funfetti cake mix?

Absolutely! You can add extra sprinkles to the batter to your preference.
