We are huge fans of crispy chicken tacos, but if you’re not in the mood for baking, these stovetop chicken tacos are going to be a great option!

21 Day Fix Dinner Recipe: Quick & Easy Soft Chicken Tacos

My friend Amy is a Beach Body Coach, and I’ve been seeing the most delicious looking recipes that she’s been sharing on her Instagram page lately. Then, while browsing on Pinterest the other day for a dinner recipe, I started seeing “21 Day Fix,” EVERYWHERE! (And the food actually looked delish!)

So I reached out to Amy and asked if she had a 21 Day Fix dinner recipe that she’d like to share with me, so I could make it and hand it out to all of you. She agreed, and here we are! Let me tell you… I took a bite immediately after adding the last topping, (as you’ll see in the video below) and it was absolutely tasty.

    Recipe and more photos below:

In this video, I simply warmed up the rotisserie chicken with the spices in the coconut oil, since it’s already cooked.

If the video didn’t do it justice… the photos make my mouth water alone. Even if you aren’t participating in the 21 Day Fix, you’ll want to try this one. It was so incredibly quick to make, and it will now go on my dinner rotation. PLUS, I’ll feel so much better about how healthy it is.

    Chicken Tip:

Amy mentioned that we could use a rotisserie chicken from the store to make it even easier. (I knew she was my friend for a reason. She’s speaking my love language for certain.)  Then, once we were done with the rotisserie, we boiled it in a bit of water, veggies, and spices to make our own rotisserie chicken stock; WHICH later became the base of my favorite Homemade Chicken Noodle Soup that my husband loves so much. 21 Day Fix Measurements:

*1 red (chicken), 2 yellow (if using both tortillas & black beans), 1 blue (avocado), 1 green (lettuce & tomato), ½ purple (salsa), 1 teaspoon (oil)
You could substitute the avocado for cheese (still would count as 1 blue container).
