    Chorizo sausage gravy on biscuits

    This easy chorizo gravy recipe adds spicy sausage to classic white gravy, which gives it a “kick” making it the perfect addition to serve on top of homemade biscuits for a hearty breakfast meal.

    When you love sausage gravy but want to step outside of the box with a flavor twist, look no further! This not only became a new favorite gravy to cover biscuits with (especially biscuits cooked in the air fryer) but to also serve on breakfast potatoes, in this biscuit and gravy casserole recipe, poured on top of these garlic biscuits, or on top of country-fried steak!

    Why You’ll Love This Gravy Recipe

    • The FLAVOR!!! It’s beautiful in color and since the chorizo is highly seasoned, it seasons the gravy for you!

    What kind of meat is chorizo made of?

    It’s made of pork sausage. So it can be really fun to substitute ground pork sausage with chorizo in certain dishes! So instead of a regular white country sausage gravy, you can have a chorizo sausage gravy!

    What is Chorizo Gravy?

    When we make it, we use simple ingredients like…

    Ingredients:

    • chorizo
    • flour
    • milk
    • garlic powder
    • salt

    This creates a sauce that is seasoned with the chorizo and thickened with flour, making it a great addition for chorizo biscuits and gravy, certain proteins like chicken fried steak, or starches like sliced potatoes or hashbrowns!

    How to Make the Gravy

    1. Start by cooking chorizo over low heat in a pan for 10 minutes or until it reaches a minimum temperature of 170°. Do not drain.
    2. Next, add in 2 heaping tablespoons of flour.
    3. Whisk together with the chorizo.
    4. Pour in the milk, garlic powder, and salt.

    Cook over med-high heat, whisking for about 3 min or until thickened, and then serve!

    How to use chorizo gravy

    • on top of biscuits
    • with country fried steak
    • on top of scrambled eggs
    • chicken fried steak
    • fried potatoes or hashbrowns
    • toast
    • on top of a breakfast burrito

    Tips for Making This

    • If the gravy gets too thick, add more milk, by the ½ cup until it reaches your desired consistency.
    • If the whole package of chorizo will be too spicy for you, reduce the amount of chorizo you use! It’s flexible and can be changed to reflect your desired spice level.

    Ingredients

    • 9 oz. chorizo
    • 2 tablespoon flour *heaping tablespoons
    • 2.5 cups milk
    • ¼ teaspoon garlic powder
    • ½ teaspoon salt or to taste

    Instructions
     

    • In a skillet (large enough for the gravy to cook in) cook the chorizo or medium heat until done, which is about 10 minutes or until the temperature of the chorizo reaches 170. Do not drain.
    • Add flour, garlic powder and salt, and stir with a whisk until combined.
    • Add milk and whisk frequently, cooking for about 3 minutes or until gravy thickens.

    Notes
