    Girl’s Night “In!”

    I’m a firm believer in keeping the spirit alive in friendships. There will be times that you are at your worst, breaking point, and deepest troubles, and there’s nothing better than a good friend that comes running when you call.

    Then of course there are the fabulous times that you can’t wait to share with your besties, because you just can’t keep it to yourself, and want those that you adore to know as soon as possible.

    For the in-between times, it’s important to keep exercising those friendships. Girl time is a “must,” in my life, because without it… I would continually have a “void,” that needed to be filled. That’s why I love hosting things like a garden party for my friends!
    So to break away from the everyday stresses, I always try to schedule a little girl time in my life between the diaper changes, and family duties.

    For this particular “girls night “in,” get-together, I wanted a “fiesta,” type menu, because it may get me as close to a Mexico vacation, that I could get. 😉  I also knew my girlies like to be at least a little health-conscious, so a little “veggie cuisine,” would be right up their ally.

    The girls night in was on a “weeknight,” so I’m all about keeping it quick and easy. You’ll die when you see how easy it was to throw this together.
    But wait, after the burger recipe, I’ll spill the beans about what I did that I’m a bit ashamed of…

    Spicy Guacamole Black Bean Burger

    This spicy guacamole black bean burger has so much flavor! The guacamole flavors combined with the black bean and spice are a must to try!

    Ingredients
     

    • 1 burger MorningStar Farms Spicy Black Bean Burger
    • 1 tablespoon Guacamole You may like this gaucamole recipe!
    • 1 leaf Leaf Lettuce
    • 1 slice Red Onion
    • 1 slice PepperJack Cheese
    • 1 teaspoon Chipotle Sauce
    • 1 Hamburger Bun
    Prevent your screen from going dark

    Instructions
     

    • Cook the MorningStar Burgers on the grill according to package directions.
    • Place a slice of cheese towards the end of the cooking time, to allow the cheese to melt.
    • Simply style the burger the way you like it!
    • I styled mine in this order: Bottom Bun, Cheeseburger, Chipotle Sauce, Leaf Lettuce, Red Onion, Spread Guacamole on underside of top half of bun, Bun

    My big secret?

    I made a pit-stop by a fast food restaurant and grabbed my favorite fries. I put them in little cute ceramic dishes that I also picked up at Target, and wall-lah.

    Party Decor

    I’m completely obsessed with Target’s home decor, party decor, ok ok… everything there. I snagged the cute white dishes, and pop-of-color dishes & decor at Target too, and it couldn’t have looked better.
