Here are key ingredients that make the best cucumber salad:
- Cucumbers – find firm cucumbers with little “give” so you have that crunch. I used regular cucumbers for this recipe when making it for you but I also love using English cucumbers in this recipe.
- Cherry tomatoes – you can use slicing tomatoes instead but I find that cherry tomatoes, sliced in half, add a less mushy texture, and are more firm and pair with the cucumbers nicely.
- Onions – white or yellow, or red onions will work for this recipe.
- Italian dressing – using your favorite brand will work just fine, and you can even use a zesty Italian to make a zesty cucumber salad if you prefer.
How to Make Italian Cucumber Salad
- Slice all of your veggies and place them in a large mixing bowl.
- Next, pour on the salad dressing, and then sprinkle on the seasonings.
- Stir to combine and mix in well.
- Cover the bowl with plastic wrap, or a lid, and refrigerate for 2 hours (or longer if making ahead of time).
TIP: Chilling the salad for a couple of hours allows the vegetables to absorb flavor and the dressing to give them more flavor.
- Once the cucumber salad has chilled for a couple of hours, it’s ready to serve.

Keep this cucumber salad in the refrigerator when not actively serving. Enjoy within a couple of days to enjoy the freshness of the cucumbers and other vegetables if possible. Discard after 4-5 days if needed.

Italian Cucumber Salad
Ingredients
- 2 large cucumbers
- 1 medium onion sweet, red, white or yellow
- 1 pint cherry tomatoes
- 8 ounces Italian dressing half of a 16 ounce bottle
- ½ teaspoon black pepper Or more if you prefer a stronger pepper flavor
- 1 teaspoon garlic powder
- 1 Tablespoon Italian seasoning
Instructions
- Wash and slice 2 large cucumbers (with peel) in to about ¼ inch thick slices.
- Wash and slice 1 pint cherry tomatoes, in half. Slice 1 medium onion in to long, thin, slices/strips.
- Place all sliced vegetables in large mixing bowl.
- Pour 8 ounces Italian dressing on to the vegetables and then add ½ teaspoon black pepper, 1 teaspoon garlic powder, and 1 Tablespoon Italian seasoning. Stir to combine and evenly coat vegetables in dressing and seasonings.
- Cover bowl with plastic wrap or lid and store in the refrigerator for at least 2 hours to allow the flavors to absorb in to the vegetables. Serve!
