Chopped Caprese Salad

Chopped Caprese Salad: This is one of my FAVORITE side dishes to make on a weeknight.  It’s quick, easy, healthy, and DELICIOUS. 

Whew!!! I’ve wanted to share this Chopped Caprese Salad with you, for about 2 years now, but it seems like I always make it… we eat it, and I forget to take photos.  But today, I planned ahead and snapped some shots.  (and a video!) 🙂

I’ve always kept the ingredients handy to make this quick side dish, on any night of the week. It’s by FAR, my favorite side dish to whip up, when I’m in a hurry & looking for something on the healthy side.

I’m sure there are MANY versions of a caprese salad recipe out there, but over time, I’ve added ingredients… taken away ingredients… and have played with it, until I’ve gotten it RIGHT where I want it.  Could you switch up the ingredients?

You bet.  This recipe is VERY forgiving.

Chopped Caprese Salad Recipe

Tomato, avocado, olive oil, kosher salt, dried basil, & mozzarella pearls.  That’s it! That’s all that I put in it.  But here are a few additional ingredients that you could add, to mix it up a bit:

Additional Ingredient Suggestions:

Garlic Powder, Fresh Basil, Chicken (to create a main dish), Crushed Red Pepper Flakes, Dashes of Hot Sauce, for a little heat, Cumin, Red Onion…and I could literally go on & on.  The options are endless.

Chopped Caprese Salad


  • 1 Roma Tomato, chopped
  • 1 Avocado, peeled & chopped
  • 1 Pkg of Mozzerella Pearls
  • Pinch of Kosher Salt
  • 2-3 Dashes of Dried Basil
  • 2-3 Dashes of Olive Oil


  1. Simply combine all of the ingredients, and stir, evenly distributing them.
  2. Store any leftovers in the fridge.
  3. Please note: I've noticed when I've made this in advance, placing it in the fridge, leaves the tomatoes tasteless. For best results and flavoring, make this dish right before serving.

I know how hard it is, to keep avocados on hand, before they rot.  I’ve made this recipe a TON, only using the cheese and tomatoes.  It’s STILL delicious!
