Chopped Caprese Salad: This is one of my FAVORITE side dishes to make on a weeknight. It’s quick, easy, healthy, and DELICIOUS.
Whew!!! I’ve wanted to share this Chopped Caprese Salad with you, for about 2 years now, but it seems like I always make it… we eat it, and I forget to take photos. But today, I planned ahead and snapped some shots. (and a video!) 🙂
Chopped Caprese Salad
I’ve always kept the ingredients handy to make this quick side dish, on any night of the week. It’s by FAR, my favorite side dish to whip up, when I’m in a hurry & looking for something on the healthy side.
I’m sure there are MANY versions of a caprese salad recipe out there, but over time, I’ve added ingredients… taken away ingredients… and have played with it, until I’ve gotten it RIGHT where I want it. Could you switch up the ingredients?
You bet. This recipe is VERY forgiving.
Tomato, avocado, olive oil, kosher salt, dried basil, & mozzarella pearls. That’s it! That’s all that I put in it. But here are a few additional ingredients that you could add, to mix it up a bit:
Additional Ingredient Suggestions:
Garlic Powder, Fresh Basil, Chicken (to create a main dish), Crushed Red Pepper Flakes, Dashes of Hot Sauce, for a little heat, Cumin, Red Onion…and I could literally go on & on. The options are endless.

I know how hard it is, to keep avocados on hand, before they rot. I’ve made this recipe a TON, only using the cheese and tomatoes. It’s STILL delicious!
