Why You’ll Love This Recipe
This no bake cherry cheesecake recipe has creamy cheesecake filling, made with cream cheese, sweetened condensed milk, and a few other ingredients, making this a simple recipe that has incredible flavor! Personally, I prefer it over a baked cheesecake and feel its the perfect way to enjoy a classic dessert like this one! Ingredients
We love shortcuts around here so this recipe uses ingredients that help speed things up, and make things easier, but without sacrificing flavor!
- 8 ounce package of cream cheese, softened
- 14 ounce can sweetened condensed milk
- ⅓ cup lime juice
- 1 teaspoon vanilla extract
- graham cracker crust (storebought or your favorite homemade recipe!)
- 1 21oz. Can of cherry pie filling
See the recipe card below for full instructions and ingredients all in one convenient place!
Instructions
- Place the softened cream cheese, condensed milk, lime juice, and vanilla in a large bowl.
- Mix with a hand mixer or electric mixer on medium speed until creamy and smooth. (Until there are no lumps — if the cream cheese is not softened before using, it could result in lumps.)
- Then, using a rubber spatula, spread the cheesecake filling into the pie crust.
- Cover and refrigerate the cheesecake for 2-3 hours.
- Remove from the refrigerator and top with the canned pie filling and cover and return to the refrigerator until it all has completely chilled. (About another hour.)
Serve this cheesecake cold. (We cut it in to about 12, small slices but feel free to make larger slices!)
Hint: Although I LOVE this recipe, so much, I want you to know if you’re really short on time, they also sell pre-made cheesecake filling at the store! It can be hard to find, and I don’t think it’s near as good as this creamy homemade filling but it is an option if you’re pressed for time, and can find it!
Substitutions & Variations
Want to mix things up or need something switched out? Here are some of our favorite suggestions for this no bake cheesecake recipe.
- Cheesecake Filling – Although I LOVE this recipe, so much, I want you to know if you’re really short on time, they also sell pre-made cheesecake filling at the store! It can be hard to find, and I don’t think it’s near as good as this creamy homemade filling but it is an option if you’re pressed for time, and can find it!
- Crust – if you prefer to make a no bake crust using graham crackers and melted butter, that’s absolutely ok to use for this recipe! Or, you can even make a Biscoff cookie crust, like we did in our Biscoff cheesecake if you’re looking to have fun with that!
- Cherry Topping – although we used cherry pie filling in this recipe, feel free to use blueberry pie filling, or even something fun like apple pie filling!
- Lemon/Lime Juice – We used lime juice for this recipe but you can absolutely use lemon juice if you need!
- Cool Whip – Although we feel this no-bake cherry cheesecake recipe doesn’t NEED it… it would be delicious to also add whipped cream. You can buy store bought or make your own using heavy cream and sugar!
If you’re gluten-free, you’ll love this mini cheesecake recipe!
Storage
With it containing cream cheese, it must be stored in the refrigerator but also, cheesecake will not be firm if left out for a period of time. Either place the lid back on and store or you can cover the cheesecake with plastic wrap.
Tip
If desired, you can use another package of cream cheese to make it more “thick” but it could change the flavor a bit.

This is a very good recipe, but its not firm enough for us. So I add an extra 3 oz. cream cheese. I don’t add any more ingredients…perfection.

Hi Amanda! I’m so sorry. The cream cheese ingredient info was in the blog post but never made it to the recipe card! I’m glad you asked, and I’ve updated the recipe card. It’s 8 ounces. Thank you!
