Summer is right around the corner, and it’s my FAVE-O-RITE time of year. We socialize more, entertain more, cook more, and GRILL more!!!

Summer Dinner Ideas
Since our dinner party was taking place on a weeknight, I knew I wanted to keep it convenient. Grilling seems to create less-mess, and it keeps the heat out of the house. It’s just one of our favorite ways to make our summer dinner recipes.
You all… my husband can make a delicious beef tenderloin. For our weeknight dinner party, it was a “no-brainer,” on what we were going to have.
Oh… is that a major need for a manicure, or what!? OMG.

Alright, alright, alright. The grill was heated, so I wasn’t going to let it go to waste. We needed a side dish, and we needed a veggie. We used Maggi Seasoning in the recipe to give the veggies a delicious spark of flavor!

Needless to say… there was nothing left to put away. No leftovers, and just a few dishes. Grilling is my FAVE-O-RITE.
Party Details

Creating a place setting for each of your guests can be one of the easiest, and most “thoughtful,” things that you can do for your guests.
The guests don’t have that awkward feeling of, “Ok, where do I sit? I don’t want to take someone’s place.”
What I used:
- Placemat
- Dinner Plate
- Napkin
- Bowl (or smaller saucer would work)
- Succulent
- Place Card with initial
- Drinking Glass
- Silverware (not pictured)
That’s it! I almost bet that you have most of these already. The succulent was used as a decoration, and for a “pop,” of color, to break up the “white on white,” that I had going on.
I created the place card by using pre-cut photo paper that I had on hand and used my silhouette machine to cut out the initials of our guests. (You could easily hand-write the initials, buy scrapbook letters, or stencil on the cards.) Save them for next time, because odds are, you’ll have someone over later that has the same initial. 😉

📖 Recipe

Grilled Seasoned Vegetables
Ingredients
- 24 oz mixed veggies I purchased pre-washed, packaged. Easier the better for me!
- 1/2 cup olive oil
- 2 Tablespoons honey
- 1/2 lemon squeezed
- 1 Tablespoon soy sauce
- 3 cloves garlic minced
Instructions
- Preheat grill to medium heat.
- Put mixed veggies into a sealable, gallon sized bag.
- Mix all ingredients but mixed veggies together in a small bowl. Whisk until combined, and pour over veggies.
- Seal bag, and toss to coat.
- Pour out veggies on to a sheet of aluminum foil/grill basket, that is sprayed with non-stick spray.
- Place on the grill, and cook {tossing occasionally}, for about 15 minutes, or until veggie tenderness reaches your desired tenderness.
Notes
- red pepper flakes
- chopped onion
- rosemary (fresh or dried)
- parsley
- chives
