You’ll make this Biscoff fudge with white chocolate, Biscoff cookies (or speculoos biscuits), and a few more pantry ingredients. That’s it!
- White chocolate chips – I love the Ghiradelli brand but you can use your favorite.
- Vanilla extract – pure vanilla extract is recommended over imitation, although it will work if that’s what you have.
- Biscoff cookie butter spread – usually found in the grocery store by the peanut butter.
- Biscoff cookies (or “Lotus”) – usually found in the grocery store, along with other cookies.

How to Make Biscoff Fudge
You will love how easy this fudge recipe is! The step-by-step instructions below will give you a gorgeously layered, addictively flavored fudgy dessert in no time!
- First, line an 8×8 baking dish with parchment paper or wax paper and set it aside.
- Then, in a large microwave-proof bowl, combine the sweetened condensed milk and vanilla extract and microwave for 30 seconds until the mixture is hot but not bubbling.
- Add the white chocolate chips to the hot milk mixture and let the sit for about 30 seconds before stirring to allow them to melt. You can microwave it for an additional seconds if needed to melt the chips completely. Stir until all of the chips are melted and the mixture is smooth and creamy. *Remove 1 ½ cups of the white chocolate fudge mixture and set it aside.
- Now, add the Lotus cookie butter and fine Biscoff crumbs into the large bowl of warm white chocolate mixture.
- Stir the biscoff fudge mixture until the cookie spread and cookie crumbs are incorporated. Work quickly as the fudge will start to thicken fast.
- Pour the cookie butter mixture into the prepared dish and spread it evenly in the bottom of the pan.
- Then, pour or spread the reserved white chocolate mixure over the biscoff layer.
- Sprinkle the large Biscoff biscuit pieces over the top of the white chocolate fudge layer. Place the dish in the refrigerator for at least 30 minutes to all the fudge to cool and set.
- Finally, remove the fudge from the refrigerator and cut it into about 30 squares. Serve the cookie butter fudge chilled or at room temperature

We’re sharing a few ways you can easily adjust this recipe below:
- Vanilla extract pairs well with the Biscoff cookies, but you can use almond extract for a hint of slightly nutty flavor.
- We used white chocolate chips, but you can also make this fudge with milk chocolate chips. The flavor will change slightly, but I bet it will still be utterly delicious. Can you ever go wrong with cookies and chocolate?
- If you can’t find the Lotus brand of Biscoff spread, Trader Joe’s cookie butter is a perfect substitute.

- What is Biscoff made of? Like most cookies, there are basic ingredients like flour, sugar, oil and a leavening (rising) agent. Then, to give that warm spicy flavor, cinnamon is added. There are no nuts in Biscoff cookies.
- What is Biscoff spread used for? This spread has the consistency of peanut butter but it tastes like spreadable cookies! You can put Lotus Biscoff spread on toast or English muffins, use it to make this fudge (of course!), heat it up and drizzle it on ice cream, blend it with cream cheese to slather on bagels, use it to dip fruit in or just eat it by the spoonful. (We won’t tell.)

This Biscoff fudge can be stored in an air-tight container in your refrigerator for up to 7 days.
You can also store this creamy fudge in a freezer-safe container for up to 6 months in your freezer. You never have to go fudge-less again!
