You don’t need anything fancy for this easy butterscotch brownie recipe – some butter, sugar, eggs, flour, butterscotch chips, and a couple of other pantry staples come together to create a delicious treat!
- 1 cup of unsalted butter, melted
- 1 cup brown sugar (dark brown sugar or light brown sugar)
- ½ cup white sugar
- 2 eggs, beaten
- 1 ½ teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup butterscotch chips

Instructions
These brownies with butterscotch chips are super easy to make. Keep reading for step-by-step instructions!
- Heat oven to 350 degrees. Grease a 9×13 pan (or an 8×8 pan if you want thicket brownies) with nonstick cooking spray or line it with parchment paper.
- Blend together melted butter, brown sugar, and white sugar in a large mixing bowl or the bowl of a stand mixer. Whisk in eggs and vanilla.
- In a separate bowl, mix together flour, baking soda, and salt.
- Using a wooden spoon (or the paddle of a stand mixer on low), combine flour and sugar mixtures together in the large bowl until batter forms. Batter will be thick.
- Using a rubber spatula, fold in butterscotch chips. Spread batter into the prepared baking dish.
- Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean.
(If you’re using an 8×8 square pan, bake for an additional 10-15 minutes.)
- Transfer your 9×13 to a wire rack and cool for 10-15 minutes. Cut into 24 squares and serve. These would be delicious with a scoop of vanilla ice cream and a cup of coffee!

Substitutions & Variations
Want to mix things up or need something switched out? Here are some of our favorite suggestions for this easy butterscotch brownie recipe.
- Sugars – a blend of brown and white sugar will result in the best brownies, but that being said if you are in a pinch you can definitely use one or the other exclusively.
- Eggs -if you don’t have eggs, or can’t eat eggs, you could use a flax egg in this recipe.
- Butterscotch Chips – although we love this recipe just the way it is, with the butterscotch chips in it, you could technically replace the butterscotch chips with and kind you like! You could try peanut butter chips, chocolate chips, white chocolate chips – the options are endless!
- Butter – if you want to use salted butter, decrease the salt in this recipe to ¼ teaspoon.
