For the Pie:
- 1 (9-inch) baked pie crust shell – Holds the filling. This pie was tested with my buttery pie crust recipe. It needs to be fully baked and completely cool.
- 5 cups strawberries, divided – 3 ½ cups are halved for the filling and 1 ½ cups are diced for the glaze.
- 1 cup plus 2 tablespoons granulated sugar – Sweetens the glaze.
- ¼ cup plus 1 tablespoon cornstarch – Thickens the glaze so the pie slices cleanly.
- ¾ cup cold water – Cold water helps the cornstarch stir in smoothly.
- ½ to 1 teaspoon lemon zest (optional) – Brightens the strawberry flavor and makes the pie taste extra fresh.
For the Whipped Cream:
- 1 cup heavy whipping cream – Whips into a thick topping that holds its shape.
- 1 teaspoon vanilla – Adds flavor to the cream.
- ½ cup powdered sugar – Sweetens the cream and dissolves smoothly.

Instructions
- Hull the 5 cups of strawberries and pat them as dry as possible.
- Cut 3 ½ cups of the strawberries in half, quartering any extra large ones, and place them in a medium bowl.
- Dice the remaining 1 ½ cups of strawberries. Mash half of the diced berries and set all of the diced and mashed berries aside.
- In a medium saucepan, whisk together 1 cup plus 2 tablespoons granulated sugar and ¼ cup plus 1 tablespoon cornstarch.

- Add the diced and mashed strawberries and ¾ cup cold water and stir together. It will look like light pink strawberry milk.

- Heat over medium heat, stirring constantly, until the mixture comes to a boil.
- Keep stirring and boil for exactly 2 minutes. The glaze will turn thicker, darker red, and shiny. Remove it from the heat.

- Let the glaze cool in the pan for 10 minutes, then stir in ½ to 1 teaspoon lemon zest if using.

- Pour the glaze over the halved strawberries and stir gently until every berry is coated.

- Spoon the strawberry mixture into the cooled pie shell. Use a small spoon and any glaze left in the bowl to fill gaps around the edges.
- Refrigerate for at least 3 hours, until the filling is firm.

How to Make the Whipped Cream
- Add 1 cup heavy whipping cream, 1 teaspoon vanilla, and ½ cup powdered sugar to a medium bowl.

- Beat with a hand mixer on low speed until the sugar is mixed in, then turn it up to high and beat until stiff peaks form.

- Pipe or spoon the whipped cream around the edge of the pie just before serving.

Tips and Variations
- Dry the strawberries well after washing. Extra water on the berries ends up in the filling.
- Stir the sugar and cornstarch together before adding any liquid. It keeps the cornstarch from clumping.
- Boil the glaze for exactly 2 minutes. In testing, 2 minutes gave the most consistent, thick glaze.
- Don’t skip the 10-minute cool down. Hot glaze makes the strawberries release more juice and leaves the filling thin.
- Mash only half of the diced berries. In testing, blending all of them made the glaze thick but seedy, like jam.
- Stir the berries into the glaze before filling the crust. Pouring glaze over berries already in the crust can leave empty pockets at the bottom.
- Quarter any really large strawberries so the pie is easier to slice and eat.
- The lemon zest is optional, but it makes the pie taste extra fresh.
