    Cornflake Candy Cookies: A no bake cornflake cookies recipe that uses simple ingredients, like creamy peanut butter, light corn syrup, sugar, vanilla extract, and of course cornflakes!

    Quick Overview: About 10 minutes to cook on the stovetop, and 20 minutes to cool… this no bake dessert is ready to eat in about 30 minutes!

    A good no bake cookie recipe (like these chocolate oatmeal no bake cookies) is one of our favorite cookie recipes to make around here, and this old-fashioned cornflake candy is one of them!

    This no-bake treat is perfect for a quick weeknight dessert or even wonderful to make during Christmas because you can make them to go on a cookie platter with other types of cookies (like these easy cake mix peanut butter cookies) during the holiday season.

    If you’re looking for an easy cornflake cookies, that the whole family will love, this is it!

    This easy dessert is snackable, delicious treat, that will hit the sweet spot in minutes. No heating up the kitchen with the oven, and it even uses ingredients that you probably already have on hand!

    Ingredients

    5 ingredients! That’s all you need to make this no bake recipe.

    • 1 cup granulated sugar
    • 1 cup light corn syrup
    • 1 cup creamy peanut butter
    • 1 teaspoon vanilla extract
    • 6 cups of corn flakes

    Instructions

    1. First, get a large cookie sheet (two, if your cookie sheet is small) and cover in parchment paper. (Wax paper will work too if needed. If using aluminum foil, spray with non-stick spray.)
    2. Pour the sugar, corn syrup, and peanut butter in a large saucepan. (One that is big enough to hold the 6 cups of cornflakes eventually.)
    3. While constantly stirring, cook the sugar mixture over medium-high heat until the sugar dissolves and it starts to boil.

    1. When the mixture comes to a boil, remove it from the heat and add in the vanilla extract. Stir until combined. Then, pour in the corn flakes, and stir until the cornflakes are all covered in the mixture.

    1. Use a spoon or large cookie scoop, and scoop some of the mixture and drop cookies (candy) onto parchment, quickly, or the candy will harden and become hard to scoop.

    If you find that the candy isn’t sticking together well after scooped on to the parchment paper, allow the candy to cool for about a minute, or until it’s cool enough to touch with your clean hands, and gently form the scoops in to tight, balls.

    1. Then, allow them to fully cool to room temperature on the parchment paper for about 20 to 30 minutes. Enjoy!

    Variations

    If you’d prefer chocolate peanut butter cornflake cookies, you can try adding chocolate chips to the peanut butter mixture, to slowly melt in to the mix.

    Equipment

    You’ll need a large sauce pan, cookie sheet (but you can do without, as long as you have parchement paper, wax paper, or greased aluminum foil) wooden spoon for stirring, and a cookie scoop or spoon for scooping cookies on to surface.

    Storage

    Store the cookies in an airtight container and enjoy them within 5 days.
