    Potato Soup with Instant Potatoes

    Easy Potato Soup Recipe Using Instant Potatoes on the stovetop. So quick!!

     

    I hadn’t gone grocery shopping in DAYS! Ok… WEEKS! Things were getting pretty slim in the house.

    I knew I had leftover chicken tenders in the refrigerator, and wanted to utilize them to make something different so I didn’t hear:

    Chicken tenders AGAIN!?

    from my kids.

    Easy Potato Soup: Quick Stovetop Recipe

    Well we all know how I feel about slightly homemade recipes. (Recipes that are made at home, but utilize some store-bought ingredients and shortcuts to make things quick and easy.)

    So when I saw the instant potato package in the pantry, I knew right away that I should utilize those in some way with the chicken. Who knew adding chicken broth and a little heavy cream to this would make a crazy quick and tasty soup for dinner! (You can even make my easy homemade chicken broth for this soup.)

    NOTE: You DO NOT have to use chicken for this soup like I did. (Or I would call this Easy Chicken Potato Soup) But I found it a great way to add some protein and texture to the soup using leftovers, kind of like when I use leftover ham to make this bean soup recipe!)

    Using instant potatoes to make a stovetop potato soup is sooo easy!

    NOTE: I believe it’s HIGHLY important to use a loaded or supreme package of instant potatoes, or else you may need to add cheese, spices, sour cream, and other ingredients to give this soup some flavor.

    Another favorite soup to make with rotisserie or leftover chicken is my chicken noodle soup recipe! Mmm… the herbs in it make a dynamite flavor.

    What to serve with this potato soup

    These garlic cheddar biscuits are similar to the cheddar biscuits at Red Lobster, so when I can fix them alongside a soup like this, it makes me feel all warm and cozy inside!

    Ingredients

    • 1 package supreme or loaded instant potatoes I used a 3.74 oz package of Idaho Spuds Supreme
    • 4 cups (32-ounces) chicken broth
    • 1 cup heavy cream

    Optional:

    • left over cooked or rotisserie cubed or shredded chicken I used 2 cups of chicken
    • shredded cheese for garnish
    • parsley for garnish
    • sour cream for garnish

    Instructions
     

    • In a stockpot over medium heat, combine the package of instant potatoes, heavy cream, chicken broth, and chicken if desired. Cook, stirring often, over medium heat and until heated through. (About 7-8 minutes for me.)
    • Serve!
