I don’t know if I can express to you how MUCH I love desserts. And no bake desserts?? They’re my absolute fave. (This Biscoff truffles recipe is proof of that!)
…and I may or may not be known as the girl who always has candy in her house. But how many times have I told you…
In my house, food is love.
If I can fill someone’s belly with yummy goodies, my heart goes a pitter-pat.

With Fall right around the corner, that means I get my apron on, and I start whippin’ up sweets in the kitchen.
This week, I challenged myself to come up with a no-bake recipe that my neighbors may love, and that we could easily package up and deliver, on one of our walks through the neighborhood. I also wanted to incorporate a “Fall,” flavor if possible… and I think it worked? I dunno. Let me know what you think. 😉
Cake Batter Candy Truffles

Yeah… I said “Cake Batter AND Candy.”
My neighbor’s text after we delivered their box of the no bake truffles:
After I put the kids to bed, I snuck in to the kitchen and had the perfect little treat. IT WAS AMAZING!
Hee hee! Perfection.
“Fall Treat,” Brainstorming:
No Bake Truffles… with Mott’s® Apple Juice mixed inside the Pillsbury™ Cake Mix, and M&M’s® Pecan Pie, all over! Holy moly. Yes. It would give them the “Fall,” taste I’m looking for! Then they were born. (I had a hard time deciding between the Mott’s® Apple Juice or the Snapple® Apple, but I went with the Mott’s® since I had more of it… and drank the Snapple® while I was creating… aaaaand maybe ate the Pillsbury™ Creamy Supreme® Cream Cheese Frosting right out of the tub for a snack, since I didn’t need it with this recipe. Don’t tell.) 😉
You’ll find the recipe below, but I took photos of the process because sometimes I think photos help those who like to “see,” it too.

My favorite kitchen gadget. My Kitchenaid® Mixer. Turn that thing on and carry on…

Mix that sugar and butter together. (Be still my heart…)

Add in all of the other glorious goodies… (you’ll see what I mean below.)

Scoop out bite-size amounts of the truffle dough… (see video below of me showing you how I dip and roll them out with this little kitchen gadget, the cookie dough scoop.)

Dip all of the small balls of batter on to parchment paper and then hand roll them, to smooth the outer edges.

Before you even begin in the kitchen, or while melting the almond bark, place the M&M’s® in to a zip-top bag and crush them in to little pieces. I used a meat tenderizer tool, but a rolling pin could work too!

After you pull the truffles out of the fridge, dip each truffle in to the melted almond bark…


Before the almond bark (white chocolate) is hardened… sprinkle on the crushed M&M’s® Pecan Pie.


Stick ’em back in the fridge to harden, and eat whenever you desire.

Keep the truffles in the fridge between feeding times. The heavy cream in the batter will need chilled.

No Bake Dessert: Cake Batter Candy Truffles
Ingredients
- 1-1/2 cup all-purpose flour
- 1 cup yellow cake mix {I used Pillsbury™ Moist Supreme®}
- 1/2 cup unsalted butter softened
- 1/2 cup white sugar
- 1 teaspoon pure vanilla extract
- pinch salt {I used Kosher salt}
- 1/4 cup apple juice {I used Mott’s® Apple Juice}
- 2 Tablespoons heavy cream
- 16 ounces white almond bark
- 9 ounce bag M&M’s® {I used Pecan Pie flavored but any flavor of M&M’s® will work and be delicious!}
Instructions
- Pour M&M’s® into a ziptop bag. Crush them into small pieces. Set aside.
- Beat together butter and sugar until combined with a mixer.
- Add cake mix, flour, salt, and vanilla and mix thoroughly.
- Add in apple juice and heavy cream, and mix until combined.
- Pour in 1/2 cup of the crushed M&M’s®, stir to combine.
- Prepare a cookie sheet by placing wax or parchment paper over the top.
- Using cookie dough scoop or tablespoon, dish out small {bite-size} amounts of dough, rolling in your hands, creating a smooth ball shape.
- Place balls of dough on to the prepared cookie sheet.
- Place in refrigerator for 20-30 minutes.
- Meanwhile, in a separate bowl, melt almond bark, according to package directions.
- Dip each truffle into the melted almond bark, and place back on cookie sheet, sprinkling each one with crushed M&M’s®.
- Place back in refrigerator until ready to serve. Store in air-tight container in refrigerator.
