Asian Chopped Salad
We are HUGE fans of salad recipes here, but having the same old salad every day can get boring.
Unless we’re having the BEST Side Salad recipe… that one NEVER gets old.
So tossing things up (no pun intended… well, ok, maybe a little) making this Asian Chopped Salad to serve alongside a weeknight dinner or to take along to a potluck dinner, adds amazing flavors to the menu!

Salad Ingredients

- packaged red cabbage

- crunchy rice noodles

- sesame Oil
- olive Oil
- rice Vinegar
- juice from can of mandarin oranges
- honey
- clove garlic
- fresh ginger
- juice from half a lime

Tips for Making this Asian Chopped Salad

Asian Chopped Salad
Ingredients
Asian Salad Ingredients
- 16 oz.
cabbage and carrot coleslaw mix
- 1.5 cups packaged red cabbage or shred red cabbage
- 3 romaine lettuce leaves
- .25 cup fresh cilantro
- 2 green onions chopped
- 15 oz. can mandarin oranges with 1 tablespoon of juice reserved
- .5 cup crunchy rice noodles
- 1.5 cups edamame shelled and cooked
- slivered almonds for garnish optional
Asian Salad Dressing
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 tablespoon rice vinegar
- 1 tablespoon juice from mandarin oranges
- 2 tablespoon honey
- 1 clove garlic small, minced
- 1 teaspoon fresh ginger minced
Juice from half a lime
Instructions
- In a large salad bowl, combine all salad ingredients.
- In a small bowl, whisk together dressing ingredients and pour over salad.
- Toss thoroughly to combine.
- Top with extra crispy rice noodles and almonds, if desired.
