We are HUGE fans of salad recipes here, but having the same old salad every day can get boring.
Unless we’re having the BEST Side Salad recipe… that one NEVER gets old.
So tossing things up (no pun intended… well, ok, maybe a little) making this Asian Chopped Salad to serve alongside a weeknight dinner or to take along to a potluck dinner, adds amazing flavors to the menu!

Salad Ingredients
As with all the recipes here on Fantabulosity, you can count on easy to use, everyday ingredients, and HOPEFULLY ingredients that you already have on hand, or can easily pick up at the nearby grocery store.
This salad is no different, although some of the ingredients may need to be picked up if you don’t usually have an Asian recipe on the menu!
This recipe is very forgiving, so if you don’t have an ingredient on hand don’t be afraid to skip it!

Salad Ingredients:
- small package cabbage and carrot coleslaw mix
- packaged red cabbage
- romaine lettuce leaves
- cilantro
- green onions
- can mandarin oranges- drained
- crunchy rice noodles
- edamame – shelled and cooked
- slivered almonds for garnish
Asian Dressing Ingredients:
- sesame Oil
- olive Oil
- rice Vinegar
- juice from can of mandarin oranges
- honey
- clove garlic
- fresh ginger
- juice from half a lime
Tips for Making this Asian Chopped Salad
As with any recipes, feel free to change/add what works best for you. But here are some tips to make this recipe easier or faster.
- You can chop your own cabbage and carrots if desired.
- You can find shelled and cooked edamame in the freezer section.
- The edamame provides a punch of protein to make this a filling lunch option.
- Serving suggestion: Fried Rice or Spring Rolls (Can grab both in the freezer section!)

Ingredients
Asian Salad Ingredients
- 16 oz.
cabbage and carrot coleslaw mix
- 1.5 cups packaged red cabbage or shred red cabbage
- 3 romaine lettuce leaves
- .25 cup fresh cilantro
- 2 green onions chopped
- 15 oz. can mandarin oranges with 1 Tbsp of juice reserved
- .5 cup crunchy rice noodles
- 1.5 cups edamame shelled and cooked
- slivered almonds for garnish optional
Asian Salad Dressing
- 1 Tbsp sesame oil
- 1 Tbsp olive oil
- 1 Tbsp rice vinegar
- 1 Tbsp juice from mandarin oranges
- 2 Tbsp honey
- 1 clove garlic small, minced
- 1 tsp fresh ginger minced
Juice from half a lime
Instructions
- In a large salad bowl, combine all salad ingredients.
- In a small bowl, whisk together dressing ingredients and pour over salad.
- Toss thoroughly to combine.
- Top with extra crispy rice noodles and almonds, if desired.
