Ingredient Notes
By using canned cinnamon rolls, it really cuts down on the other simple ingredients for this recipe!
- unsalted butter – You can use salted butter too, and it turns out just fine!
- canned cinnamon rolls – We used Pillsbury cinnamon rolls but any brand/type will do, and either the original icing or cream cheese icing works great as well.

Step by Step Directions
- First, preheat the oven to 375 degrees and lightly spray an 8×8 baking pan.
- Then start breaking the cinnamon rolls in to small pieces and place in to greased baking dish.
- In a medium bowl, beat together the eggs, heavy cream, cinnamon, and vanilla until combined well.
- Pour egg mixture over the top of the cinnamon rolls in the dish.
- Drizzle the maple syrup all over the top.
- Place in your preheated oven and bake for 20-30 minutes (see tips below for your desired baking time), until the top is golden brown, and let cool for a few minutes.
- Remove the metal lid from the icing container and microwave the icing for 5-10 seconds, until it’s thin enough to drizzle. Then, pour the icing all over the top of the casserole!
How long to bake cinnamon roll casserole
If you see the photos below, the first image of the cinnamon roll casserole, is baked for 20 minutes at 375°. This is a more gooey, soft, doughy center, that some prefer. For instance if you love a gooey cinnamon roll… then you may prefer 20 minutes.
The second image is the cinnamon roll casserole baked for 25-30 minutes, giving the casserole more of a “cooked” fluffy center that others may prefer.
- When the casserole is baked to your desired level, sprinkle powdered sugar on top, if desired and enjoy!
Keep in mind, this delicious breakfast casserole is best served as a warm casserole, with a little extra syrup and powdered sugar.
Absolutely! Just double the ingredients and use an 8×11 baking pan or casserole dish. Cooking time should still be the same, but keep in mind how gooey you want the center. See notes in post for different bake time.
What about a 9×13 pan? Although this pan size may be more common in your home, it may work ok but I haven’t tried this. I caution against it because there’s a lot of space left between the cinnamon roll pieces and this allows the egg/cream mixture to sit, and could be sections of a scrambled egg texture.
This casserole can all be put together the night before, covered and stored in the refrigerator, and then baked the next morning. The baking temperature stays the same but since the casserole will be really cold from refrigeration, you may want to leave it to sit out on the counter for 30 minutes or so before baking may keep the baking time but not necessary.
If you happen to have leftovers of this cinnamon roll breakfast bake, store in an airtight container or allow casserole to come to room temperature and place plastic wrap on top of baking dish and place in the refrigerator. For best results, enjoy the next morning or within 5 days.

Cinnamon Roll Casserole
Ingredients
- 2 tablespoon unsalted butter
- 12.4 oz can Pillsbury Original Icing Cinnamon Rolls
- 3 large eggs
- ¼ cup heavy cream
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ cup maple syrup
- powdered sugar if desired
Instructions

Have you ever tried to make this ahead of time and freeze it. If so how did you warm it?

Hi Natalie! If you freeze it, it would be best to allow it to thaw in the refrigerator overnight, and then bake as directed the next morning! I hope that helps!

Made for breakfast. I added 11 eggs as we like or eggs and baked in an 8×11 pan took a little longer to bake 45 mins at 350. Everything else the same.
I made a blueberry sauce as it is blueberry season. It was the perfect touch. Granddaughters loved it.

I made this just now and I think 2 eggs and maybe more heavy cream would work best. With 3 eggs it turned it into a French toast kind of casserole. It was still delicious but I was looking for more of a suped up cinnamon roll

Hi Deb! I’ve never tried this, but I don’t see why it wouldn’t work! It’s a lot like my baked french toast that sits overnight too. (Although the bread is a bit different, so I’m not 100% sure it will work… with the chance of the cinnamon rolls being a bit soggier, and have to cook a little longer???) I wish I was more help, but I’ll have to give that a try to see if it works out in case anyone else wants to know too!
