Sausage Gravy Breakfast Pizza: Everyone loves biscuits and gravy – so what about making a pizza of all your breakfast favorites in one?

It’s no secret I love breakfast sausage! I’ve baked it into a biscuit casserole or layered with egg for a quiche-like dish. This time I’ve added egg and cheese and layered it over a pizza crust!

Ingredients Needed
Here’s what you’ll need to make this sausage breakfast pizza.

- Gravy – I’ve perfected my own sausage gravy recipe and that’s what I use here. You can also use an envelope or your own family recipe.
- Pizza Crust – Find this in the canned biscuit section. It’s super easy to roll out to size! You could also use homemade or a premade dough ball.
- Eggs – Simply scramble with salt, pepper, and butter.
- Cheese – I combined cheddar and pepper jack, but feel free to use whatever you have on hand or prefer.

How to Make Sausage Gravy Breakfast Pizza

STEP 1. Parbake crust. We’re going to bake the crust just a bit at first so it isn’t soggy under the toppings.
STEP 2. Add gravy. Make your gravy and spread it on the crust, making sure to leave an edge.

Tip: Customize this to your liking! Change out the gravy, toppings, way you cook your eggs, type of cheese… it’s truly endless!
STEP 3. Cook eggs. Scramble the eggs to your desired taste and doneness, then add to the pizza.
STEP 4. Bake. Top with cheese and bake until melted and the crust is browned.
Recipe Pro Tips
- Shred your own cheese. Pre-shredded cheese has fillers to prevent caking in the bag, which means they don’t always melt as smoothly as when you shred your own.
- Make parts ahead. Go ahead and make your gravy and eggs the night before and pop in the fridge. Set them out to warm up some while the oven preheats, then assemble and bake!

Recipe FAQs
Pop the cooked and cooled pizza slices in the fridge. I like to slice before storing because I think the toppings stay on better. Reheat in the toaster oven or enjoy cold! Serve with extra gravy for dipping.
I like the tube best because it’s quick and easy to roll out and doesn’t take a lot of stretching. You could use homemade or the fresh dough ball as well. I haven’t tried it, but I bet even the croissant sheet in the tube would be a great option!
My baking sheet is about 10×15 inches here. You can make your crust as thick or thin as you like. And if it’s a premade crust like this one here, it will likely keep its shape even if it is too small for your pan. Just make it however you like – ensure that you bake the crust for about half the time on the package before adding toppings.
What to Serve with Breakfast Pizza
If you want to make the meal stretch further, serve it up with some fresh fruit salad or a smoothie. You can also make a breakfast for dinner and serve with a fresh green salad.

Sausage Gravy Breakfast Pizza
Ingredients
- 3 cups sausage gravy Get my sausage gravy recipe
- 1 storebought refrigerated pizza crust
- ½ cup shredded cheddar cheese
- ½ cup shredded pepper jack cheese
- 6 large eggs
- 1 Tablespoon oil or butter for cooking eggs
- Salt & pepper to taste, for eggs
Instructions
- Preheat oven to 400°F.
- Spread raw pizza crust on greased baking sheet (mine was a 10×15-inch pan).
- Bake empty crust for 8 minutes and remove.
- Meanwhile, make scrambled eggs. Crack the eggs in a small bowl, whisk until blended and pour in to a skillet, and then cook on medium heat, stirring often until eggs have formed in to cooked, scrambled eggs.
- If you haven't made your gravy ahead of time, do so now.
- Top the baked crust with the gravy, spreading it nearly to the edge (leave room for crust edges) then the scrambled eggs, and finally the cheese.
- Bake for 6-7 minutes. Slice into squares, and enjoy!
Notes
- I use this sausage gravy recipe for my pizza. It makes 4 cups, which I personally think is too much for this pizza. If you make it, save the final cup to serve with some biscuits!
- Not feeling like gravy from scratch? Use 1 pound of pork breakfast sausage and a packet of white gravy mix. Brown the sausage and then follow the directions on the packet. This makes about 2 cups, but it will be just fine on the pizza.
- I like to shred my own cheese for the best texture, but pre-shredded works fine. Feel free to swap out the cheese for your favorites.
